- An underrepresented cuisine across the country, Cambodian food has been slept on. This underrepresentation presented itself as an opportunity for chef-owner Nite Yun to open Nyum Bai. An ode to Cambodia’s “Golden Era”, the walls of the colorful Oakland restaurant are covered in rare Cambodian rock records from the 1960s and filled with the smells of a Cambodian kitchen. Chef Yun’s pride and joy are her kuy teav phnom penh, a piping hot bowl of rice noodles, she grew up eating every weekend and based off her mother’s own recipe. As Yun puts it, “Vietnamese has pho. Japanese has ramen. We have kuy teav phnom penh.”

No kidding out of Asia food Cambodia food is much more healthier than others ❤️ i tried some Asia dishes such as Thai Korea Vietnamese they just couldn’t beat Cambodia. Cambodia food is healthy I love it 😍
Traditional Cambodian cuisine had a lot of fresh raw vegetables and herbs with little meats. The idea was that since humans are part of the Earth, the dishes were to reflect the natural environment of Mother Nature. Traditional Cambodian soups were supposedly representations of the natural lakes and waters of Earth.
Restaurant is very tough businesses because the foods must be very very delicious to be successful and prices is not too expensive, chefs just has to learn to create new dishes, having same foods all the time, people will get bored, they wanted to eat new things, need great customers service, great decorations of the place, prices can't be too expensive.I wish Nite Yun become very successful.
Another nice recognition for Nyum Bai which made multiple lists for top new restaurants of 2018 (Bon Appétit, Eater, Thrillist). I get to the area quite often but rarely make it over to Oakland. This joint really has piqued my interest. Love this series. 👍

Phnom Penh is the capital city, not a dish
brendan weaver there’s different styles of kuy teav, this is what’s it’s called “kuv teav Phnom Penh” to differentiate the styles. The capital has a distinct difference compared to other ones.
Drake Haarper
Yup, it’s an adjective of the dish - like saying, “Manhattan Clam Chowder or New England Clam Chowder.”
