Because five strings are just better than four. I'm a proud owner of a Mezzo-forte 5-string violin and after playing it for quite some time I realised I wouldn't want to go back to four strings ever. The range of creative options is so much wider with five strings! Four strings made sense in the past (using gut strings etc.) but nowadays we have modern technology that enables us to have great sound on a C string even with a violin body.
