The cream pie because I've never had anything like it! I have had forms of the other pies before. Probably these exact ones since they're in The Book on Pie, I Think! I think the crumb topping pie is my favourite. I grew up eating a version of this. The rhubarb is tossed with yogurt sugar vanilla and flour and baked raw. It is so custardy and delicious.

My dad was a pie lover as well. As a child and through my life, I used to make him lemon meringue pie for special celebrations. I believed that this was his favorite and cherry a close second. I found out shortly before he passed that cherry was his no. 1 fav and that He actually really didn't like lemon meringue. I asked why he never told me and he said he didn't want to hurt my feelings. I make cherry pie on his birthday now to celebrate the wonderful man he was and all that he gave to me. He didn't care for cakes Def a pie man! ❤❤❤ Thank you for sharing your dad with me and bringing mine back to mind.

Hello Erin, The Rhubarb Crumble Pie was outstanding. I was leery of all rhubarb, and it was a bit of extra work making the filling and par baking the crust, just to wait for it all to cool to bake it again. BUT, it was absolutely delicious. I'd have to say one of the BEST pies I've ever made. Everyone LOVED it! Many thanks for your recipes. (I've also been making many kringles BTW). Your recipes never disappoint. Keep up the good work.

I prefer fruit pies to be very firm and always add extra cornstarch to help make it solid and firm. I hardly ever precook fruit, but I am inspired to try something different. Thanks Erin!!!!
We had 3 huge Rhubarb plants in our yard when i was little it was soo good, but havent had any in years. Never tried custard or cream Rhubarb pie, i bet they are amazing

Rhubarb is my favourite until it’s pumpkin pie season! Our family favourite combines the cut rhubarb with the sugar and eggs in a bowl and I let it sit app minutes or so to start drawing out the juices. Roll out your dough , line the pie plate and you pour the filling in. Cover with crust and bake. Etc. it is like your custard pie only way more rhubarb. It always works and I’ve never had a soggy bottom. BUT I’m going to try prebaking and we’ll see if I can get a sturdy pie slice!

I love that ya’ll are eating pie like pizza! I use your all-butta pie dough and love it! Still continuing to work to improve my dough making. Have not yet achieved the thick crimp that you have. I never seem to have enough pie dough for that. Also, I’m thinking now of the iterations for the rhubarb cream pie - mixing a little of jam with cream for a layer, adding lemon zest to the cream, topping it with roasted rhubarb…
I have always made a Rhubarb Cream pie with just rhubarb, sugar, flour and heavy whipping cream. It's my families favorite spring pie. I am anxious to try your cream pie if I can get my hands on some good rhubarb. I live in Texas so it's a crap shoot.
I love rhubarb!!! Never mix rhubarb with strawberries!! That said my very favorite rhubarb pie was my grandmother's rhubarb cobbler!! Her cobblers were the best, especially the blackberry and rhubarb. I have had a hard time finding recipes like hers. She made hers with a top and bottom crust and did the fruit in layers with dough scraps in between like dumplings. Eaten plain or in a bowl of milk(purple milk results) it was always the best!!!
Totally agree with the pure rhubarb pie - no strawberries. I could never understand the strawberry rhubarb thing. Maybe it's for people who really don't like rhubarb.🤔 I'd choose the classic rhubarb pie every time!
All three pies look GREAT! Your rhubarb stays such a pretty color. My rhubarb often turns a greyish color after it's cooked. I don't know what I'm doing wrong!
It really depends how deeply red it is. My parents’ rhubarb is regularly green without much pink hue at all, and it stays green even after cooking and baking! The grey look is usually a result of a pale pink exterior and a yellowish interior combining and desaturating the pink! If you feel like it, you can always augment it with a drop or two of pink food coloring just for the look 💖

Yes! Just rhubarb! Strawberries are delicious, but they mute the flavor of rhubarb. I probably would choose the classic, where the beauty and deliciousness of the rhubarb is on full display!
In general, I like fine sea salt because of its faster ability to disperse and/or dissolve evenly. I use kosher salt when I’m cooking - but I just love that fine sea salt for baking. I opt for sea salt specifically to avoid folks trying to use iodized table salt just because it is fine! 💖
