I added these to my christmas cookie boxes as well as your Chewy Gingerbread I msde 27 different cookies and sq for the boxes started making the dough in mid Oct and froze them raw then 2 days before the drop off date thawed and baked both of the cookies by you were really loved and was told keep them in the cookie boxes for the future Love the channel keep up the good videos I also am a big pie baker for all the holidays we have lot of family so usually make 12 pies for all the holidays and Butter Tarts since Im canadian

I made these and they are AMAZING! They're going into my regular biscuit rotation. I often struggle with American Christmas recipes because they are under the assumption that it's not sweltering hot so things tend to melt or be sticky etc etc. I made these on a 38 degree day (100f for the Americans) and they still came out perfectly. Anyway, I've moved on to baking and I'm learning how to make pie doughs from scratch. Never heard of pie beans before and I'm glad I found out about them from you before I started making the doughs in the kitchen. I'm still buying the equipment like processor, pans, and pie servers. I would LOVE to know when you'll be restocking on your pie beans. I saw your commercial during your crust tutorial and went to go buy, but both of the beans are out of stock. Would love to buy two bags. I'm still up in the air on buying cook books in general since I'm such a visual learner and have been doing great in the kitchen through videos, but if I decide to buy cook books then you'll be one of the first rounds I buy from. Hello Erin. Love your videos! I have a request, I had this fabulous cookie at a place called "Crumble" , a cookie shop. They had a Cheesecake cookie that was so good. I wondered if you could make something similar but better. Theres definitely room to improve. This was a large almost thick crackle cookie , chewy, with graham cracker hints and cream cheese frosting. Thank you
Am going to try this tomorrow, but I’ll do half the recipe with browned butter to compare because I’ve yet to meet a butterscotch anything that wasn’t improved by browning the butter first.
I use brown sugar a lot, it sticks like crazy and makes a very heavy coating. I add a bit of white sugar and rub it together, it makes the sugar stop clumping.
I like the smaller granules for the evenness of coating - but you can definitely play around with the sugar for fun and flair!!!! It will still be a delicious cookie, but may be slightly different! ❤

It will take a little finessing to get the timing right, but if you're using half the amount of dough, starting with about half the total bake time is a good place to start! ❤

I have the Chocolate peppermint Meringues in the oven now and they smell awesome! I also took a leap of faith this year and made stencils for my gingerbread house (usually I use a Pampered Chef mold & recipe) and your recipe and it came out so much better then using the mold. I baked extra and even made a gingerbread lean-to with the extra. Wish I could attach a picture - lol. Happy Holiday and can't wait to bake more with you next year!

Do you have an oven thermometer on the racks of your oven? It's super common for home ovens to fall out of calibration, and this definitely sounds like a time I'd recommend checking your oven temp! Recently teaching a private class I discovered a student's oven was off by 45°!

What about using coarse sanding sugar and dark brown sugar to roll the cookie dough in before baking? Would that work as well as granulated sugar?
