Very interesting! I wouldn't have thought to dehydrate it and doing it at a lower temperature to protect the good bacteria. Sounds like a wonderful way of making it last even longer. Thank you for sharing and being in the collaboration!

Blessings Darcy from sunny Chicago. I dehydrated a collard green kim chi that I bought at the farmer's markt. I took it back to the vendor to taste. It makes a great snack. I also use the powder.❤❤

You have such wonderful ideas. I would never had thought to dehydrate kimchee. My Korean neighbor used to make gallons of Kimchee for their restaurant. It was the greatest I have ever had. Thanks for being a part of the collaboration. I refer you to all of my friends as a great teacher who I trust to teach safely!!!!!!!!!!

I do the same thing with carmelized onions. I seem to have more onions than we can consume fresh so I carmelize them then dehydrate them. I add the pwdered onions to anything to add the flavor. I even add a tablespoon of powder to my Balsamic vinegar jar

I know about the taste change during pregnancy. That was 37 years ago.
But just last year I found out about how healthy it is to eat fermented food. The first month I started eating fermented food I lost 12 pounds. I thought that canned sourkraut was a fermented food. I didn't like sourkraut. It was to sour. It locked my jaws. Now I know better. I love fermented food. Kombucha, carrots and cranberries are my favorite. I eat the cranberries like popcorn. I'll have to buy extra this fall when they go on sale.

Cabbage Kimchi is really just sweet and spicy saurkraut. I mean basically. The flavors are more complex though. If you like saurkraut and sweet and spicy, you could just ferment a cup or two just to give it a try. ☺
