Thanks Mike, yeah was a bit sad on the loss of a big fish but I will make the most of it. In regards to hanging in the fridge I find them much easier to fillet the next day and taste better, hanging them keeps airflow around the fish so even temp and no pooling. They also keep a lot longer I find.
