Thank you for doing these! As a musician getting into jazz, it's so helpful to hear all these stories behind and around the tunes.
As a violinist, a lot of things about chords are hard to understand! One thing I don't understand about this tune-the movement in the last phrase (last 8 bars) is written in the real book as F6 | F-6 | Cmaj7 E-7b5/Bb | A7. I understand this (sort of), since the E-7b5/Bb gives that descending motion from C - Bb - A, and takes that Bb from E-7b5.
However, in iReal Pro, that phrase is written as Fmaj7 | F-6 (F#dim7) | E-7 (Cmaj7/G) | A7. The (chords in brackets) are written above the primary chords in a smaller font.
Could you maybe explain how the movement in the iReal Pro version changes the sound/where it comes from?

Good question! The underlying chord progression is the same: F, C, A. Each version just adds a little harmonic icing on the underlying cake.

Very nice! How long does it take to be able to play songs without looking at the sheet music?

I'm glad you're asking this, Barbie, because it's really the first goal in any improvising style of music. How long it takes depends on the individual person, but I've seen most students learn to improvise over simple chord progressions confidently in a few weeks. Then it's just a question of memorizing the chords and melodies to songs and getting comfortable improvising over them.
