For my Cinco de Mayo menu I'm making chicken fajitas with smoked and grilled chicken thighs and then to the Blackstone for the bell pepper assortment and onions. Can't wait! My wife is also "over-sensitive" to heat, and other strong flavors.
I make everything in large quantities here and freeze for another day - It works out very well and is often better tasting than on day one - Plus you still have the option of making it into something else down the road. - Cheers!
