The sky diving cutscene and instant hole entering only occurs if u dismount ur bird when the button prompt is available. If not no cutscene for me and the decent is painfully slow.
One thing i noticed is when cutting out Fi's dialogue, they cut out my favorite line. When you find the first kikwi in the Wii version, after he runs away, Fi pops out and mentions that it had a weird dowsing result when you were dowsing for zelda. You could then ask if it was zelda, which fi said it was a 5% chance. I always found that pretty funny, but thats just straight up gone, not even an optional peice of dialogue.

2 things I noticed is that the dialogue box now has the name of the character talking on top and that the sheikah stones that would give hints are gone 🤔
I'm not 100% sure but I think the diving cutscene depends on how far away you are from the opening. I've found that the cutscene will trigger immediately if you get the dive prompt.
Yeah, the cutscene doesn't trigger if you're high above the hole, though they may have changed the amount of distance before the cutscene triggers in HD. You can skydive above the hole in SD if you're high enough.
