  • On a ranch near the very small town of Seymour, Texas, cowboys fuel up for hard work. Kent and Shannon Rollins are cooks who prepare their cowboy meals-on-wheels on an actual, working chuck wagon. Scott Simon reports on the secrets to cowboy cooking.

    I was visiting a friend in a rest home once and met this lady who was badly crippled up with arthritus. She was about 85 years old and just full of laughter and energy to visit and talk. My friend kept falling asleep during the visit and I would sit quietly with him- he wasn't long for our side of heaven. Anyway, this old gal came over struggling with her wheelchair and introduced herself. She asked if I played rummy. I said I did, she produced a deck and we began to pass the time.
    Oh, she had a wonderful way of telling her story. She was born on a ranch in 1890 in Eastern New Mexico, out in rugged cattle country south of Vaughn. Her dad had been disappointed she was a girl and kind of ignored her. Her mom died when she was very young. But, she learned to cook from the ranch cooks and soon made herself useful. She never went to school- there just weren't any. Her dad died when she was 15 and back in those days girls were not expected to know how to run a ranch, so, it sold off and pretty soon she was homeless and needed a job. Women were supposed to marry, but she didn't want that and went on to find a job on a neighboring ranch as the cook...and she stayed there the rest of her life until she became too stove up with arthritis to continue... They put her in the rest home on social security benefits and there she was. She had absolutely nothing in her room but little things the other "guests" had given her. I had an old color TV at home and brought it to her- OMG! She was so happy over that. I paid for cable for her, too- at the time it was only $14.00 a month, so no big deal. My friend finally passed but I would still come and visit her. We traded recipes (You can imagine I was the only one benefiting from that - She was such a great cook and storyteller. I was just fascinated by her.
    One day I came in to see her and they had her up walking hanging onto the handrails in the hall. She was so tired and hurting, but still full of joy- "He, Jay- Look at me. I've walked ten steps today!" I came by a few weeks later and she was gone. They told me she had quietly passed away in the night. No one called me and she was already buried. No one went to her funeral. I went out and put some flowers down on her site, spent $400.00 on a little stone marker for her. Under her name I had them carve, "Ranch Cook". I know she would have been glad of that.
    There is something about ranch life and living that close to the land that just makes good people.

      Thank you for sharing her story. It's incredibly sad to think of the number of people who's stories have been lost to time because no one cared or know to tell/record the history of their lives. Would you mind sharing her name and maybe the cemetery she's buried in? I've been traveling all over for work and would go out of my way to place some flower or donate to the cemetery when/if I'm nearby.

    I'm not a religious man, but I'd still say that the world is a better and richer place for people like Kent and Shannon Rollins. Their food looks amazing and I'd love to attend one of their cooking schools.

    This reminds of the days I use to work summers at my grandfather's ranch in Mexico. I'd hate waking up before dawn and would work for hours,but whenever I'd hear my grandmother yell that breakfast was ready it always brought a tear to my eye. Also I earned my meal through hard work 😓

    I camp a LOT, so I have used a lot of instant coffee. The first time I watched one of Kent’s videos was on making Cowboy Coffee. I don’t use as much instant coffee anymore! Thanks Kent!😉🙃

      When watching his cooking videos, there are some dishes proves that they are also capable of whipping up Michelin star worthy dishes (Fancy).

    I live in the southeastern corner of Oklahoma where we have mountains and pine trees. In Western Oklahoma where he's at, it's the total opposite and the wind blows 24/7. Where I'm at there are still cowboys, but most of them use gas powered four wheelers to round up the cows. It's nice to see people keeping the old traditions alive like Kent is doing.

    We all have so much in common, we vaqueros along the Mexican borders have been doing this as well for hundreds of years and still going strong. 👏 Kent is a beautiful human being, reminds me so much of my great vaquero uncle abelardo (abe).       @E The origins of the cowboy tradition come from Spain, beginning with the hacienda system of medieval Spain. This style of cattle ranching spread throughout much of the Iberian peninsula, and later was imported to the Americas.
      i.e. Cowboy is European culture

      Brian Baer yeah like we want to drive miles for fancy. My top ramen & hotdogs is good enough plus I’m saving lots of $$$ 1.29 for a 12pk top ramen you can’t beat that over a steak & lobster that cost $30.00 that’s a months worth of top ramen. 😝

    I love the way you make your food. I was trained in French and raised on Italian (thanks to my grandmother) and my girlfriend is Asian, so I eat her food and at the same time, I attempt to educate her on American and Western cuisine,

    This reminds me of how it must've been for my great grandparents. They cooked for the railroad workers here in Western North Carolina who cleared the land & built the tracks. Country cooking.

    Such a wholesome way of living! It denotes a sense of freedom that isn't too common these days. What I'd give to get out of the rat race, especially life in the UK! I'd happily turf myself out of bed during the small hours for a shot at some of that good food!

    I love Kent and Shannon Rollins channel and always checks out their latest recipes and use many of their recipes at home. I was raised primarily in the country and still live here after retiring from both the military, and from the state jobs I had. If I had a family to take care of I would not live in an urban environment as it is tough where living in a rural environment is so much better as Nature provides so much for you to live off of and with the money you make for food you can live really good.

      Daniel Engle You can find a cowboy in central California huge old cattle ranches out here. It's not as big as Texas, Wyoming or Montana.

    South African from Boer (farmer/pioneer) stock here. My old man's fondest memories were from working in the Lone Star state. Said you fellers' used to use hose pipes to quench the pit fires when big old Texan steaks. He also said to me that the day I emigrate up north to the land of the free I should plant my roots in Texas.

    Reminds me of my visiting my grandma and grandpa’s farm back home in Indiana. After watching just a couple of his videos I got a cast iron skillet and cooked my first steak in it. Hard to describe the memories something so simple brought back.

    He may not own the title chef but that good man can cook food that you will love and wakes the sun. I imagine he could make garden soil tast palatable. I watch his videos on youtube and have his cookbook.

      There's only one way to beat fresh biscuits, gravy, sausage, and eggs for breakfast...and that is to
      add on some fried taters made in a blackened iron skillet! Well..maybe a little homemade jam to go on
      that last biscuit! Well, I don't have to work tomorrow, so I'm off to the store...guess what,'s for breakfast tomorrow!
      And yes I have homemade jam made from Michigan tart cherries, and not do not use biscuits from a tube,
      or sausage from a tube...I go to my local meat market that makes it in house daily! I will let you in on a little secret
      if you promise not to tell Rocky... I like fried squirrel too!

    Cowboy Kent Rollins is my favorite RUclips cooking show. Instead of the ugliness of the major news stations intent on hate and drama, I put on Ken't's shows and have a pleasant downtime before bedtime and I go to bed with untroubled dreams.

    This man is from Hollis, Oklahoma. As someone from Oklahoma, I can tell you that Hollis is out in BFE. It is a true cowboy town that is within reach of the massive ranches in West Texas and SW Oklahoma. I’d give a left nut for this man to put a restaurant in Tulsa, but I understand that’ll never happen. He’s an honest to God Okie treasure.

    Kent Rollins has been an inspiration to me for a number of years now. His knowledge of cast iron outdoor cooking is unmatched. BTW, Bertha is NOT cast iron. If she was, she'd have cracked or broken when he set her down the way he did.
