I made a freezed dried strawberry buttercream for the frosting. My husband ate 5 cupcakes in a row. It's absolutely perfect. You all must try it. Thank u for the recipe. Hello Aya - I feel I can taste/smell the sharpness of the vinegar when using it as a buttermilk substitute in cakes. I was wondering if you thought buttermilk powder dissolved in kefir, would work for a softer more rounded flavor and still be acidic enough? I am not able to find whole buttermilk where I am, and the low-fat versions don't provide sufficient flavor in my opinion. I appreciate that it is a minor point, but was just interested to know your thoughts before trying. Also. it isn't completely clear to me if you butter the sides of your pan or just the bottom and allow the sponge to creep up and grab the sides for maximum lift? Hi Aya! I love the structure of this cake! I just made it again for a small wedding party and it was such a hit with the SMBC recipe!!! How would you recommend adding a different flavor to the cake? For example, for a matcha flavor, how much matcha do you recommend using? Should I just sub 1 tbsp vanilla for 1 tbsp matcha?
Wow congrats for successfully making a cake for a special event! I'm happy to hear that. I usually add matcha powder and reduce the same amount of flour instead or add more liquids (Milk in this case. You can dissolve it with a bit of milk beforehand or sift it with cake flour). 1 Tbsp should be fine, adjust the amount as you like!
It’s a delicious cake and easy to make but not easy to handle! It broke on me on sides a few spots! 😢 hopefully I can glue it with icing tomorrow! I left them in freezer to firm up 🙏🏼

So can this vanilla cake recipe be converted for red velvet cake. The from scratch red velvet cake w/ butter frosting that I have requires a flour based paste that needs to be cooked and cooled completely before blending with sticks of butter. The mixture thickens and holds up for a few hours in our humid weather here as we often hold get togethers outside. I’d like to know your version if you have one. I used olive oil! I only use it for oil just because it's healthier. You can use regular oil as well. And vinegar helps to create softer cake, reacting with baking soda.

Thank you! Vinegar reacts with baking soda and helps to create a softer cake. Not a major difference but it just helps. I used white vinegar!
