  • Hey folks :)
This is a really wonderful soup folks! A real must try this one :) This will make 2.5 litres of soup!! Enough for everyone…well, if there’s 5-6 of you that is :)
I’ve listed everything I used down below in case you want to give it a go for yourself :)
    ____________________________________________________________________
    Serves 5-6 hungry people :)
2 Medium skinless chicken breasts (use 3 if they’re small)
    1 Finely diced onion
    3 Finely diced celery stalks
    2 Teaspoons minced garlic
1.5 Litres (about 6 cups) Chicken stock or broth-I used 4 chicken OXO cubes and 1.5 litres water-
2 Teaspoons seasoning (whatever brand you like) use a seasoning with an onion/celery/garlic base
    500 ml (2 cups) Water
113g (half a stick) of butter
60g (1/2 cup) of plain or all purpose flour
    240ml (1 cup) Whole milk
240ml (1 cup) Double or heavy cream
*Rice can be added if desired…I would use about 120g (1 cup)*

Hi Cheryl. I was a little dubious if this soup would be flavourful enough but I was craving chicken soup. Oh my! This soup was outrageously good, best creamy chicken soup I've ever had! Its like magic. I had to freeze half so Id stop eating it (to be fair- not well endowed in self control, consequently well endowed everywhere else!) I'm enjoying your channel A LOT, you slow cook a lot and I LOVE slow cooking. Your recipes make sense and you are a warm and lovely presence. Thank you SO SO much.

a little tip when making this, put your chicken back in AFTER you thicken it that way you can use your hand blender to mix in the thickener and eradicate any lumps, easier than having to use a wisk, then put your chicken back in.

Instead of adding the sauce to the soup and having to deal with lumps, quicker & easier to gradually add ladlesful of the soup to the sauce until it's thin enough just to pour in and stir. A couple of ladlesful will probably thin the sauce enough to stir in easily to the soup.

to make the mixing easier: while you are making the white sauce..... add a few ladles full of the chicken soup to the sauce and work it in well with the hand whisk. then mix it with the slow cooker.

One thing you will learn about Americans and not everybody this is just a general view from one person. You will find that most North Americans think of cream of chicken soup as something condensed in the can to make a casserole with and even a casserole isn't always the same as what you make 4 a casserole in the UK. I call these mug soups because they go beautifully from a mug to drink instead of using a spoon especially as I live alone. I like a hot mug of soup to sip slowly and warm my soul. these mugs soups are also soda Vine with a sandwich. Just As Americans love cream of tomato soup with a grilled cheese sandwich. I just prefer my soup in a mug and I do cheese on toast with Worcester sauce instead of a grilled cheese.! :-)

I think today will be the day. :-) there is a new seasoning by McCormick that you can purchase in the grocery store or online in America anyway and I'm going to send you some because it has blown my mind! I probably have 850 spices herbs and Seasonings on my baker's rack or more. I thought they was nothing left that could blow my mind and it just did. :-)

I am curious though why you use flour and not cornflour to make the mix (a roux?). I find cornflour doesn't go as lumpy as plain flour. Would appreciate your advice. Thanks.
