  • The Super Bowl is here and we’re making my Wheat Beer Chili with Mexican Chocolate, the popular chili recipe we made on the food truck. There are lots of chili’s out there and I tried hard to make mine a unique chili recipe. This is a super easy chili recipe with a few things that make it super unique and flavorful. Mexican chocolate gives the chili this awesome mole flavor and the wheat beer adds a nice balance to the richness. If you’re looking for Super Bowl party recipes, this chili is a must. I make my chili with no beans but it's a delicious sweet and spicy chili that was a big hit on the cart. You will see Cholula Hot Sauce featured throughout this recipe.     Made this Thursday as I was nominated to make and bring chilli to a cricket club social evening. Followed the recipe with only one deviation as I added 120 grams of shredded chorizo. Everyone loved the chilli with almost all of them having a second serving. Loads of flavour, right spice level, and perfect chilli consistency. One of the best chilli recipes that I've ever eaten. Thank you so much for posting not only the recipe but the step by step video instructions.

    So, I made this last night, and my husband said, "holy F$#@ you need to enter this in a Chili contest" haha, I told him it was your Recipe! I can't say enough good things about this Chilli. It's very different from anything we've had on the West Coast of Canada! The flavours are so big and delicious. It was a task but worth it. Thank you a million times! This is now going to be my fams go-to chilli recipe. PS - we made a chilli hash for brunch today using leftovers, and it was next level delicious, Cheers ❤

      It probably wouldn’t win any chili contests. Not because it’s not delicious but because it’s not as rich as a chili competition chili. Cooking competitions are all about creating one perfect bite which means much more rich. Most people wouldn’t be able to eat a whole bowl of chili competition chili because of its richness.
      Not trying to be a know it all or talk down this recipe, as it looks amazing! I just really enjoy chili cook offs lol.

    Ok so I made this chili tonight. Wow! Just WOW! Unbelievable how good it was. I don't have a food processor so my chop was not nearly as fine as what you did. But the simmering down process broke all the ingredients down just fine. For years I've been using Wick Fowler 2 alarm. Wick is now officially retired. Great recipe! Thanks for sharing it!

    Bruh! I just spent the last 7 hours making this chili and everyone ate thirds, THIRDS! This stuff is bangin! I did add the dried guajillo and ancho peppers. Also I simmered mine an additional two hours to get the consistency to my liking. Wonderful chili. Adding it to the family recipe book. Cheers! 🍻

    This is a fantastic recipe. Thanks for sharing! I love the way you explain the techniques. So straightforward and easy to follow.
    My wife went from being mad that I was in the kitchen all night making chili and sticky toffee pudding to giving multiple "This is VERY good!" compliments on the meal.
    Update: Also got a "The more I eat, the more I like it." Double win!

    Corn sprinkled on top thats almost burnt and coated with the same seasoning mix you use in the chili is a great topper too. That looks delish!!

    I've just made this with the closest ingredients I could easily grab in the UK, using a pound each of beef and pork since that was what I had on hand. Will be using as a condiment for burgers and hot dogs over the next couple of days. Fantastic recipe! Thanks!

    I made this tonight, it took me way longer than the initial prep and cook because I don’t have a food processor, but I wanted to make sure I got the consistency right, I chopped for an hour and a half, and I am literally sitting here right now with the food in front of me and I’m feeling emotions that I have not felt in years. I skipped the chocolate because I couldn’t find any. And I couldn’t find Worcestershire so I’ve substituted a home made plum sauce. This is what life is all about… Chilli Con Carne. Thanks for sharing this recipe.

    This came out so good. The heat level was perfect and the flavor was unbelievable. The only changes I made were to substitute some of the beef with pork and add pinto beans at the end. Another amazing recipe. Thank you.

      Hi Shaun, made this last night ate today for dinner with my partner. They said it was quite a different taste. I’m thinking I might have gone too heavy with the Chocolate. I didn’t get the Mexican chocolate he used just used 85% green and black. Thinking UK palates are more used to tomatoey chilli what do you reckon? Other half of the batch I’m going to add some chopped tomatoes to and see if it balances it out.

    Hey watched you for a while. Started getting back into cooking. Made this last night couldn’t quite get all the exact ingredients here in Scotland but got substitutes close enough. Normally chilli is really bland with the packet mix you get. I can say this is in another realm completely, an incredible chilli! Will definitely be making it again!     Thanks for that technique. I’ve always been taught to drain the grease with ground beef. Didn’t think about just cooking out the moisture. Came to this vid from the bolognese one

    I am late to commenting because since I first watched this video I have been to busy making and eating this chili. This is way to good! I make it quite often in large batches to freeze and enjoy through the winter. Everyone in the family loves it. Ps due to the not so chunky nature of the recipe it's great as a topping to burgers and hotdogs.

    Hello recent subscriber here. Amazing channel with great recipes and amazing editing. Congrats and thanks for all your work in providing us foodies with such great content! Chili is my obsession and has been for years and while I finally settled on a recipe I really enjoy, I am always willing to try something new. Yours is surprising with the addition of all those peppers. I am wondering if I should add a little bit of Thai red bird's eye peppers that I have in my freezer? And I usually add some unsweetened cocoa powder but never chocolate so will give that a shot . Thanks!

    I think I need to take some notes from your chili. I add beans in my vegan recipe, but never though of blending up the veggies, and just left them small-medium dice. The chocolate is a great twist for depth!

      Years ago I started adding a tiny amount of unsweetened cocoa which not only intensified the color of the chili but its flavor too---which should not be identifiable. Start with a 1/4th teaspoon. In this case less is definitely more.

    Yo, so it's eight in the morning, I got off work a couple hours ago and I had a mad craving for some chili. I'm usually a pretty basic beef, beans, 3-spice guy but I watched this video awhile ago and I had the urge. I only had Green Bell and Jalapeno in the fridge and I had to sub cocoa powder for the chocolate but man on man, this chili is the business. My only wish is that I could have bought a bowl off the truck from the man himself back in the day.

    I am here to say I am a no-bean chocolate chili convert! LOL I was a little skeptical to make chili without any beans, and although I'm not opposed to adding chocolate to chili, I didn't think it would be a gamechanger either. BOY was I wrong! This chili blew my mind, it's my new go-to recipe. I did make a couple tweaks... I added one dried habanero (just broken in half, infused and removed at the end) for extra heat, and I did half Cholula and half Chipotle Tabasco (just love the chipotle flavor). This is now the chili I will be making over and over, every year :)

    Iv never added chocolate to my chilli.. I do add a scoop of a good instant coffee which enhances the chilli Flav but I deff wanna try the choco idea !!! This looks deeelashhhh

    I made this pretty much exactly to your recipe. Very rich and complex chili. Very enjoyable. If I were to add beans to it would you have any recommendations as to type and when to add them? By the way, the chili spice mixture would make a terrific rub for many meats. With no salt or sugar it makes it a very versatile base. Thanks!

      Yea that rub is basically what i use as a rub for bbq. I’d just add the beens with all the liquids. Some kidney beans would work well. Thanks for watching!

    Alright L&G….this chili is simmering on my stove right now…and, of course I’ve had several tastes of it…..and I can tell everyone….WITHOUT A DOUBT…that you HAVE NOT LIVED….until you make this chili recipe…. Chef Steve is spot-on… the flavor is sweet and spicy and amazingly complex….I got the Mex chocolate on Amazon and used the Guajillo Chile one… Also, it took over an hour to sweat down the veggies and the meat, but be patient!! It’s worth it… the rest of the recipe goes fast after that…
    Man oh man…This chili is seriously amazing…. You gotta make this…and yes….people will be knockin down your door over this stuff…. Chef Steve… I’m a kraut from NE Ohio, but I’m converting to Italian…Bigtime….Well done Sir and thanks for helping me be a better cook…. Much Respect….Max…..

    First, love the channel. I made the chili last night and it tasted pretty good as I was sampling along the way but when it was done and I had a bowl the sweetness kind of overwhelmed me... did I do something wrong or would you say it is pretty sweet? Dont get me wrong it was also spicy and complex but very sweet.

    I like the idea of using sumac, wheat beer and Mexican chocolate, those would add such nice flavor.

    I like the attention to detail. I turned the heat down and cooked the veg and tomato paste a little less but still too bitter for my preference for chili. And between the carrot, tomato and brown sugar too sweet also. I wouldn’t make this again.
    I think the bitterness could also be from the beer and just the long cook time. I like the sofrito as a base though. I will steal this idea and go back to my normal method.

    Excellent looking recipe. Gonna take a crack at it this weekend. If one were to use fresh chilies which would you recommend, and how many? I have Guajillos, Pastillas chipotles and anchos on hand.

      I used to make it with fresh chili’s, used all of those except Chipotle’s. But try whatever you want. I don’t think you can go wrong. Chipotle’s are the only one that might change the flavor from what this recipe is but would just add a Smokey flavor to it

    i'm a little bit late but sir that was an interesting chili. all of my guest and myself enjoy it. i made some self made Guacamole and french baguette to the chili.
    ah and i add some cinnamon, because i love cinnamon ;-)

    I have been happy with a three-pack from Amazon of chili powder......stores easier than larger dried whole chilis.......has Guajillo powder, Ancho powder, and Chili de Arbol powder.....about two ounces each for maybe 15 bucks......I mix them up when I make chili just like you do.

    Hi Steve, would you recomend squeesing any excess water out of the processed veg in a cheese cloth before cooking to speed up cooking out the moisture?
