And the way his hat seems to function like a selkie's coat, but instead of hiding it to keep him human, the witch's reaction is the opposite - not only will she give it back, she'll give him a ribbon to keep from losing it again.
Same! I regret that fewer artists like to focus on unique or at least distinctive noses, especially with convex nose bridges and especially on characters who are pretty ladies. Admittedly noses of any type can take some effort to get the hang of but it just takes practice. I also love how sweet the relationship is too; he's repaying her so much because she was kind enough to just hand his hat back to him instead of her forcing him to be a certain way through deceit.

I'm guessing his crow brain was just there's a pretty shiny to give her but then the human brain took over when it realized it was a ring and that has a specific meaning that is way too early for but he still keeps it for when the time is right

Because that good will from the crow gets passed to the others in its group (flock/murder/D&D group) and the others will ALSO treat the human well. Get on a crows bad side?
