    All your recipes are foolproof. I added lemon rind and juice instead of milk and used Stork instead of butter. The sponges are so tasty. Thanks so much.

    I had some leftover fruit goo and made potato noodles the next day, roasted them with ground poppy seeds and a little bit of icing sugar and used the goo as a dip for the noodles. Amazing!

    For those who can't tolerate xanthan gums, psyllium husk is a good alternative. Just replace with the same quantity. Looks a yummy recipe.

    I put the goo in your chocolate cupcakes and made a topping with white chocolate and cream cheese - of course again with a blob of goo on top of it. Your recipes make me creative :D It was awesome - like everythig from you. It all works really well together :) Thank you so much for all your ideas and videos :)

    I love this , I made them without egg with your flax seed egg replacer. It worked really well !! So thank you.
    Its really hard to find a good cake recipe when you have allergies to wheat, gluten, eggs , milk and nuts :( x

    Hi Jemma! Me and my family have numerous health problems so we are gluten free with egg and dairy allergies... If you have the time could you make a cake/cupcake/muffin recipe that we all could eat?

      Aubra Scott-Hinkle yes I would love that too. Non dairy milk and vegan butter spread work great but I’m having trouble with an egg replacement

      I think I've seen a flax seed egg replacer that Cupcake Jemma has done before. Try searching for that! We have similar challenges in our GF baking too- nuts, dairy, soy, and eggs!

      I know this was ages ago but have any of you tried aquafaba? I’ve heard great things! 2 TBSP of the liquid in a can of chickpeas substituted for one egg. I haven’t tried it personally but I’ve heard it works very well!

    How do you like working with coconut flour? I use it often in gluten free cooking, but cupcakes are always a challenge!

    Ha! I happen to have a bag of frozen raspberries in the freezer...will def. be giving this a go over the weekend, with a side of gluten. Lol :D and cream cheese... just...YUM. xx

      @@karenibarra2482 Thank you so much for getting back to me. I was trying to find a good recipe for both vegan and gf cupcakes but to no avail. It seems like they can be either vegan or gf, but not both. I guess there is something in the eggs that prevents them from drying up the next day.

    Awesomeness! I have a mate who is celiacs so I have the perfect excuse to crack on with making some of these!
    Are gluten free scones just as easy be replacing standard flour with a gluten free mix?

      Hey Tim. It's a great place to start - sometimes you'll need to tweak the recipe a bit or mix for longer etc depending on how they turn out as G-free flour blends can behave slightly differently from normal flour, but it's definitely worth a go.

    Hey Jemma! New to the channel here in the US and I was wondering how much cocoa powder and/or vanilla extract you would recommend adding to the gluten-free batter? With a family that has an enormous sweet tooth but mostly gluten-intolerant it would be great to change it up every now and then.

      Aysha Lehdan the gum holds it all together. The way gluten does for a regular recipe. Without it crumbles apart.

      Try using a bit of arrowroot starch instead, which is more widely available in larger supermarkets.

    Hi jemma, i love ur videos!!! I attempted to make the goo in advance (that is, the night before) and now it has "solidified" into real jam (jelly-like). What shld i do so that i can still mix it in my batter and get the swirls?

      Charlene Lim you can put it on a pan at low fire and add some water, when it is well combined its ready. don't overcooked it or it will solidify as it cools.

      Nope. Remember she said a little goes along way. So the answer is no dont add more or it will come out gummy.

      Yes definitely - just make up a batch of plain or even vanilla batter and swirl through the goop!

      Hi Hiu, gluten free flour blends tend to be thirsty fellows! So a straight swap of self raising flour may not give you the same results. A cheeky experiment maybe in order? ;)

      Éireann Gaffney I have a gluten allergy, it won't matter much. It just adds some spring to the texture. I don't use it, and my cupcakes and cakes turn out alright:)

    Are there any other go to gluten-free flour mix recipes? I Iive in Austria and the only gluten-free flour mixes are horrible and never work properly!

      kitty00009 If you can get hold of Dove's Farm somehow then that is brilliant. It's made in Britain though, so I guess it would be pretty difficult and expensive to get hold of.
