Cafina shot

A hydraulic lever machine by Cafina Switzerland. Believed to date around 1960. Mains water pressure is used to activate the hydraulic piston up and down. Through the hydraulic principle the mains water pressure is able to generate the required 7-9 bar extraction pressure. These machines solved the problem of barista fatigue from having to pull the heavy spring lever all day, however the machine...

    Why not make it fully steel? Aluminum production creates tons of toxic aluminum dust and it is absorbed by whatever it comes into contact with, including soil and food products. Also, for the price of the Robot, steel would be better bang for the buck, unlike cheap aluminum. For example, you can buy a fully steel kettle for under $20. Hence, it's not expensive or anything. Using so much aluminum in a manual lever machine priced at $450 feels a bit cheap/greedy.

    Should I use silicone compound in the “shoulders” of the Robot, I mean on the surface between the metal and teflon washers to prevent the arms from screeching and wearing out? Only Molykote is good or any food grade silicone lubricant will do the job? Thx in advance for the answer!

    ive been peaking 12/13 bar. good to know the tube can go up to 20 bar. i assume the steel arms is strong enough as well? i am thinking i have no need to go past 15 bar. but there has been a real need for me lately to get creative. peaking at the end of the shot (increasing flow/pressure throughout the entire shot) has improved the taste, and i appreciate that this machine makes it simple to do that as well.

  • @mescellaneous

    i wish the inside where you lock the portafilter was like how the the Strietman CT2 is on the outside. just a slope so that it's easier to lock in and fuss free. right now i have to push up because the gasket pushes against the basket, it's a bit of a hassle. part of the portafilter on the upside edge has grounded down a bit because i have to push up every time. and it would be a pipe dream, but somehow adding heating like flair 58x. that would be the best to get the most out of the bean. otherwise, no desire for anything else. love the tactile feel of the robot, doesn't need to be easier. the feedback i use in pulling the shot actually, to feel the bloom and manage pressure/flow. love the durability of it. and i have prefer the look of the original screens. glad to have bought extras haha.

    • @Cafelat
      @Cafelat 8 месяцев назад

      The machine is polished, the "flakes" are almost certainly polishing compound from when we polish the arms. I will pay more attention to this but really most items are final polished during assembly. The only part the water sees is the underside of the piston.

    Why didn't you make the Cafelat Robot with a 58 mm Porter filter size? Also some rubber sleeves on the handles would be nice to ease the discomfort people complain about.

    • @Cafelat
      @Cafelat Год назад

      Hi yes it is specified at 58mm but after the basket is pressed it became 57.60mm it was just a quirk that happened. Since there is no need to go crazy with tampers on lever machines I did not ever think of remaking the basket tooling and I do not like changing the systems (e.g. a new basket, portafilter, piston etc) because I think it is important that all the parts are the same throughout the years. For the comfort factor, you can add on the extra mittens if the pressing action is not to your liking.

    Thanks for the detailed video. Often have too small of a shot volume with the same group. Not sure what I’m doing different with my machine really, I use substantial pre-infusion time but it never runs through as much as you showed before letting the lever go. Perhaps I need to adjust my grind a bit coarser. I’m also using a bigger filter basket to increase max available water volume to overcome this which I'm not quite sure helps at all. Pro 800 dipper, temp set to 124-1255C giving approx 1.2-1.3 bar.Never managed to get this much volume even though you use a smaller basket. Have to give this a try.

    This is perfect Paul, I've only now started to play with temperature for my shots and reckon I've been running too hot for medium / dark roasts. As you say the water could be even hotter again down at screen level but this is a pretty good value for me if we take the brew temp to be maybe 7 or 8 degrees less than your water?
