- A hydraulic lever machine by Cafina Switzerland. Believed to date around 1960. Mains water pressure is used to activate the hydraulic piston up and down. Through the hydraulic principle the mains water pressure is able to generate the required 7-9 bar extraction pressure.
These machines solved the problem of barista fatigue from having to pull the heavy spring lever all day, however the machines waste a lot of water and quickly fell out of favour. To make a double shot of coffee e.g. 60ml at least 1litre of water is used and discarded in the process.
