This is perfect Paul, I've only now started to play with temperature for my shots and reckon I've been running too hot for medium / dark roasts. As you say the water could be even hotter again down at screen level but this is a pretty good value for me if we take the brew temp to be maybe 7 or 8 degrees less than your water? Say I want to brew at 85 degrees I'll try setting my kettle to 92 or 3 degrees. Thanks so much for the info!
I measured the boiler temperature of the kettle today using the same probe from the piston. The kettle switches off around 99.6 deg c.
