Filet O Fish Catch and Cook Broughton Island Spearfishing
The Filet O Fish is a pretty divisive burger on the roster but here's my interpretation of it utilising my first Mahi Mahi I've ever caught. Ive got a quick recap of a recent spearfishing trip to Broughton island and then we get stuck into breaking the fish down, breading the fish, frying the fish and finally making the sauce to go in the burger.

Mate cheese is from Coles if you’re in Aus, Woolies has a pretty similar product though

Try using a filleting knife mate instead of boning knife. Filleting knife has heaps of flex. 💪 Great video as well. 🤙
Actually prefer the stiffer knife mate, find the smaller blade gives you far more control over the tip of the knife opposed to the long flexi blade. Much like a Deba knife Japanese chefs use to break down fish

For people who cant go spearfishing, do you know any good places to get bonito? All of the fish markets that I have bough from dont clean out the fish or bleed it before icing it, its just as is, probably not even put out of its misery before icing, which lowers the quality of the meat a lot.
Hey mate unfortunately it can be pretty tricky when buying fish. I feel like standard practice within the industry doesn’t lend itself to a top shelf quality unfortunately. There are some guys out there who are delivering a top quality product. People like Luke from Nautical Wholesale seafood on the NSW mid coast are coming in with a very different approach looking for quality over quantity. There’s plenty of others but unfortunately you seem to have to seek them out. it’s not the norm. That’s why I got into fishing though allows me control over the whole process and gives me access to a premium product.
@@josh.bollen As someone who has wanted to get into spearfishing for a while, do you need to go out on a boat to get to good waters or are you able to/allowed to go into the baysides? I have seen people diving but not necessarily spearing out just a hundred meters or so from the bay. Do you have a video on a beginner setup for spearfishing and things that a new spearfisherman should know (laws, expenses, what you should look for etc)

Put them in a pan for 1 second each side on high and they’ll taste exactly the same but have no chance of containing parasites, worms, or bacteria.
Never had a problem eating it like this, flashing it in a pan even briefly would give it a very different texture. Also not sure how it would effect any of the meat inside
@ you don’t know how putting a sear on the outside of fish kills bacteria inside the fish but you’re running a seafood channel?
@Smiddyack if you only apply heat to the outside of the fish that will be the only part effected. To effectively kill bacteria that you’re concerned about USDA food safety recommends fish be cooked to an internal temp of 63°C. Again tho never frozen fish before eating raw, never had to flash it, a lot of fear mongering around food.

Really appreciate showing the clips of braining the fish in the water. That’s one of the harder parts of spearfishing for me so it helps to see others technique

Okay awesome I just caught a 48cm silver trev. Going to dry age this for xmas starters. Quick question Josh, are you able to fillet it prior to dry ageing and simply dry age the fillets rather than the whole fish? Fridge space is at a premium.
If you have the fillets exposed they will dry out too quick and you’ll get a barky exterior like an extreme Pellicle. What most people do is wrap them in good quality paper towel and then cling wrap tight so no air, you need to change the paper towel most days to avoid too much moisture building up. You can also lay the fish on a rack in the fridge rather than hanging if you are able to squeeze that in. Main thing is not letting the fish/meat sit its juices

How do you be sure they dont carry any parasite?
Hi mate there’s a lot of fear around parasites in saltwater fish. Only in exceptionally rare cases has anyone ever died as a result of them. More often people just end up with food poisoning type symptoms as we are not a suitable host for saltwater parasites like anisakis. On the other hand freshwater parasites can kill us and should never eat uncured or raw freshwater fish. I’ve never had a problem with salt water parasites and my preference is not to freeze before eating as it diminishes the quality of the meat dramatically especially when you’re eating it raw.

Ha I also noticed the swim bladder ectasia in a lot of the silver trevs I've been catching lately. Thought they were a sign of worms and found the exact paper you linked which alleviated** my fears of eating them raw. Have you also noticed hard almost calcified cysts in some of their bones? Think it's either osteomas or hyperostosis. Love the content mate!
Shouldn’t be any problems eating them raw mate. Haven’t noticed any of the hard cysty bits personally no
