You mentioned the tradition filling had pork and prawn mince. Would be interesting to try blitzing the abalone or even tenderising with a mallet and then finely dicing, could substitute that for the prawn and add to pork mince.
Yeah a lot of people mentioned running in through a grinder when I told them what I was making didn’t realise it was pretty common for things like dumplings, spring rolls etc could definitely do it like that

Pretty sure the NSW regulations say it’s gotta be a flat blade knife, not just a regular knife.
Nothing I know of that specifically says you can’t use a knife however I would definitely recommend using a specific tool or your hands
@@josh.bollenI think you’re right, just says blade longer than it is wide. I only use blunt ones for the reasons you mentioned! Plenty get bled out
