I left out the parmesan as I had Ori added a few other ingredients to the stock and reduced it quite sufficiently to make it fairly Rich, and also pan fried the mushrooms off first and then tossed them into miso, tossing them through at the end of the risotto. Definitely will make it again. 10 out of 10/10
