Welcome Yakigang to the Yakitoriguy Channel!
I wanted to start a RUclips cooking channel for some time now. When I started to learn how to make Yakitori in the beginning of 2018, there weren't really any good resources for me to follow, especially in English and online. After months of piecing together whatever information I can find online, through trial and error, and self-teaching while hosting Yakitori dinners, I became more comfortable with making Yakitori. It was also only until I went to Japan to work at the Yakitori shops, that I really learned the deeper nuances and techniques as well. All these knowledge I have, I wanted to put in video for the community to learn. What's taken me 3 years (and counting) to learn, I've put together a crash course so you can learn in few hours.

No idea how to contact you except here. I don’t touch anything meta related except vr so trying to get your attention o instagram is a no no. Was hoping you were on twitter x. Anyway your livery grill I can’t get my hands on anywhere. Is there any indoor grill you can recommend? Maybe a 2024 video updat3 on what to get. It’s winter where I am right now and I can’t grill till spring time. I got a yakitori grill with some thaan bricks but I wanna cook noooowwwww !
I made a video few years back on electric alternatives on Amazon, but looks like even those area sold out. Ideally you want to look for open exposed coil design (similar to open charcoal grilling) vs the flat griddle top (no different than cooking on a frying pan). Amazon does have some industry looking coil design ones from few companies but the reviews seems hit or miss. There is the Iwatani gas grill, but be warned it creates lots of smoke and will set off the indoor smoke alarm usually.

is it the sakai kikumori? wondering if you are okay with it being a carbon knife?
That knife in the video is a Tojiro Garasuki. I have some knife recommendations in my Amazon shop, link in descriptions. Carbon steel is amazing and I have some but for Yakitori/chicken handling in the kitchen I prefer the ease of use of stainless.
Does he use rice flour or katakuriko. Or just egg only?

Liver has lots of Iron and Vit K2, which makes BONES not STONES. So eat liver, very healthy for you. Be sure to give your dog and cat liver as well.

Not sure if you have answered this but what did you use for the pot itself? Also I’m wanting to get into making yakitori eventually and maybe start a food truck one day and are health inspectors anal about tare age and the less average parts of the chicken? Example being the heart liver feet and stuff
Hey yakitoriguy, i was wondering how much binchotan or ogatan you use for one session on the yak grill. Big breakpoint for a student like me is the affordability of regular yakitori grill nights. So it would be good to know how many you usually use, so I know how much money I would be spending going into this "hobby"

i'm confused... in the video you said if you keep the tare in the fridge it can last for months, but then you said your tare is 2 years old. why would constent use/top-up of tare prevent it from going bad?
Definitely upping my game to cook closer on the coals, and layer in sesame or sunflower oil basting along with using schmalz/chicken fat. AND gonna add broccoli to the lineup :)

There's no comparison to binchotan. The lump charcoal just doesn't cut it when making yakitori.

Konro on the way, binchotan on the way, fan, skewers, etc... will be using this video breaking down my first chicken with a nice set of knives -- no honesuki yet, but a nice beefy single-bevel Deba and a 6" Saji petty hopefully do the trick :)
