While I lived in Japan for five years (a long time ago), I had a plum tree in my yard and would make a big batch of Umeshu every year. Excellent idea incorporating the Umeshu into an Old Fashion. My Umeshu was very sweet - I might skip the sugar cube. Great job!
Great video to showcase the homemade umeshu. I probably would have used that Nikka From The Barrel I see on the shelf for a take on an old fashioned. While definitely not a bourbon, the sweetness of it is a little bit closer and it is higher proof which I think would match well with the umeshu.
Just curious and off-topic for this video, but how long does it take for you to completely break down a whole chicken - removing all bones and putting everything on skewers?
Love the videos! Audio is a bit unbalanced between your speaking voice and hers, I'm assuming that's because you have a lav on and she doesn't. Look into Rodelink GO II. It's a super small, clip-on style lav, that is quick and easy to apply and can get you decent audio. Buy the bundle that has the dual receiver and 2 clip-ons so you can match audio.
I was actually using the Go 2 for both of us (started with Go 1 at the beginning of this channel) but I think whenever my friends come on, they tend to talk a bit more quieter than I do. Will play around more with audio.
This is everything but not old fashioned. Is too sweet adding extra sugar to umeshu no point. Literally splash of whiskey in umeshu with added sugar cube and bitters. Collab with professional bartenders this just looks so bad. Love your work. Peace ❤️

My umeshu came out lighter than the store bought one so overall was pretty decent. Although yea even without the sugarcube it can probably work too.
@@Yakitoriguy The older the batch, the darker it got. Was sad to leave - and - they would not let me take my Umeshu back to the U.S. - so sad.

You're right! The Nikka from the Barrel has the higher proof that gives it that chest burny feel. Def enjoyed this glass though!
There is a Japanese plum whiskey called Akashi Ume. It would probably work well in same sort of recipe.
