Leftover Chilli Beef Orzo
Leftover Chilli Cheese Orzo
A couple of days ago I made a chilli for dinner, there was a portion leftover, which I was going to have for lunch...but I decided to make a whole new dinner out of it!!
This was so creamy and cheesey, still with a bit if a kick AND it was oven baked in one pan, with only 5 ingredients!!
I love it when one dinner becomes two with no faffing. You could definitely do this with leftover bolognese too
I've written up the recipe below, so make sure you hit save, A x
Feeds 4
700ml chicken stock
200g soft cheese (Philadelphia style)
400g leftover chilli
200g dried orzo
80g grated cheddar cheese
Heat the oven to 200C

    Are you kidding me, this looks so simple & tasty- who knew. Thankyou. My teen son is neuro divergent & literally the only meals he'll eat is chicken stew, chilli & his fav mac n cheese & it gets boring. I'm going to make him this tonight.

    Here's the recipe: Makes 6 chocolate pots 157g chocolate orange 100g dark chocolate 100ml Baileys (or off brand equivalent) 1/2 tsp orange zest 300ml double cream 8 digestive biscuits 25g melted butter Crush the digestive biscuits, either with the end of a rolling pin until you have a rough crumb Add 25g of melted butter to the crumb and mix well until all of the crumbs are coated. Divide the biscuit between 6 ramekins and press down with the back of a teaspoon. Set aside 6 chocolate orange segments for the topping and put the rest in a microwaveable bowl with the dark chocolate broken into pieces Microwave the chocolate at 30 second intervals stirring each time until smooth. Leave to cool a little Place 300ml double cream in a mixing bowl and using a hand blender, mix until it begins to thicken. Add 100ml of Bailey’s, the zest and the melted chocolate and whisk until smooth and thick. Divide the mixture between the ramekins and place in the fridge for 4 hours or overnight. Remove from the fridge 15 minutes before needed Place a chocolate orange segment on top of each one before serving

    Here's the recipe: Makes 4 pies 8 cumberland sausages (400g) A sheet of ready rolled puff pastry Onion chutney 250g camembert wheel A beaten egg Ground black pepper Slit the sides of the sausages and pull out the meat. Place it in a bowl and discard the skins. Use your hands to break up the meat. Heat the oven to 200C Roll out the sheet of puff pastry and cut it in half lengthways, then into quarters widthways, until you have 8 equal sized rectangles. Divide the sausage meat between 4 of the pastry slices. into a square roughly 1.5 cm from the edge of the pastry. Make sure it's even in depth and use a fork to rough up the surface so it cooks quicker and the chutney can slip into some of the gaps. Spread 3 tsps of onion chutney over the top of the sausage meat. Thickly slice the camembert wheel. Lay 3-4 slices over the chutney. Very gently roll out the remaining slices of pastry a centimetre or two on each side so it's big enough to fit over the filling. Lay the pastry over the top of the filling and press the edges firmly together. Trim the edges a little and use the prongs of a fork to make indents to seal the edges. Make a tiny hole in the centre of the pastry. Brush with beaten egg and sprinkle with a little ground black pepper. Place on a lined baking tray and bake in the oven for 25 minutes, or until golden brown and the sausage meat is cooked through.

    Here's the recipe: Feeds 4 24 beef meatballs 1 onion finely sliced 3 cloves of garlic finely chopped 300ml double cream 400ml chicken stock 1/2 tsp oregano 10 sundried tomatoes finely chopped 50g finely grated fresh parmesan cheese 60g fresh spinach a small handful of fresh parsley, finely chopped Heat a drizzle of oil in a large non-stick pan. Add the meatballs and fry for 7 minutes on a medium heat, turning regularly until browned all over. Remove from the pan and set aside (They won't be totally cooked through yet) Add the onion to the pan and fry for 5 minutes until soft. Stir in the garlic for the final minute. Stir the double cream and chicken stock into the onions, before adding the oregano, sun-dried tomatoes, spinach and parmesan. Gently bring to the boil, stirring until the paresan has melted. Season with salt and pepper and stir in the chopped parsley. Return the sausages to the pan and gently simmer for 5-7 minutes, turning regularly, or until the sausages are cooked through. If the sauce begins to dry a little, add a splash of milk.

    Here's the recipe: Makes 4 Pies 4 large deep oven cook yorkshire puddings Bolognese - I made a small batch using 250g beef mince 100g grated cheddar cheese Sheet of ready rolled shortcrust pastry 1 egg beaten Heat the oven to 180C Make a small batch of bolognese or heat up leftovers (make sure it's thoroughly heated through) Cut out 4 pumpkin shapes from the pastry (Check it will cover the top of the yorkshire pudding) and cut out faces. Brush them with beaten egg and place them on a lined baking tray. Bake in the oven for around 7-10 minutes or until golden brown and crisp. Divide the grated cheese between the yorkshire puddings and press firmly into the base. Bake in the oven with the pastry pumpkins, according to packet instructions (Usually 5-7 minutes) Fill the yorkshire puddings with the cooked and heated through bolognese. Fill to the top and finish by placing a pastry pumpkin face on top!

    I know some of you prefer the recipe in the comments - so here it is! 👇 Feeds 4-6 60g butter 2 leeks finely chopped 40g of flour 1 tbsp oregano 500ml of chicken stock 200ml milk 100g grated cheddar cheese 220g of roasted (cooked) chicken shredded 400g tin of cannelloni beand drained and rinsed 8 frozen potato waffles Heat a drizzle of oil in a large, deep non-stick frying pan. Add the leeks and fry for 5 minutes until soft. Heat the grill Stir in the butter until melted, followed by the flour. Stir on a medium heat for one minute until the flour has dissolved. Add the oregano Stir in the hot stock a little at a time, stirring constantly and bringing it to the boil before adding more. Stir in the milk, roast chicken, grated cheese and cannellini beans. Season with salt and pepper Stir until thoroughly combined. Bring to a gentle boil. Simmer for 5-7 minutes until the chicken is heated through. In the meantime, place the potato waffles in a large baking dish and grill on one side until golden. When the chicken mixture is cooked, remove the waffles from the dish, pour in the hot filling and top with the potato waffles, cooked side down. Put the dish back under the grill and cook for around 5-7 minutes on high until the waffles are golden brown and the chicken is still heated through.     Here's the recipe: Makes 4 pies 60g butter 2 leeks finely chopped A sheet of ready rolled puff pastry 40g of flour 1 tbsp oregano 400ml of chicken stock 100g grated cheddar cheese 220g of roasted (cooked) chicken shredded 1 egg beaten Add the butter to a large pan and melt on a medium heat. Add the finely chopped leeks and fry for 5 minutes. Heat the oven to 200C and remove the pastry from the fridge Stir in the flour and oregano until the flour disappears and the mixture is starting to bubble. Slowly add the stock a little at a time. Bringing it to the boil each time before adding more and stirring continuously. When all of the stock is used up and the sauce is smooth. Take it off the heat and stir in the grated cheese and roast chicken. Season with salt and pepper. Cut the puff pasty into quarters widthways and then lengthways down the middle so you get 8 equal rectangles. Spoon the mixture onto 4 of the rectangles. Spread it evenly (you'll have enough leftover filling to make a couple more) keeping a 2cm border around the edge. Lay the other 4 pastry rectangles over the filling and press the pastry together firmly around the edges. Use a fork to make indents all around the edge. Trim to neaten if you like! Make a small hole in the centre of each one. Brush with beaten egg and sprinkle with a little black pepper.       Omg, this is what I’ve been looking for. Always leftover ingredients, that rot before I get to use it in the next dish, because don’t know how to cook. I always wish recipes would have rollover uses of the ingredients left over from the last meal, to save money , effort, and reduce what’s going into the waste, so if this is what I think you’re doing, thankyou!!!     Here's the recipe: Feeds 4 150g Garlic and herb Boursin 375g macaroni 600ml vegetable stock 400ml milk 60g fresh spinach 100g grated cheddar cheese Heat the oven to 200C Place the Boursin in the bottom of an oven proof casserole dish with a lid Pour the macaroni in around it and season with salt. Pour in boiling vegetable stock and stir the pasta so it doesn't stick together (the boursin should hold together in the centre) Heat the milk in the microwave until it's as hot as you can get it, without boiling. Add the milk to the pan and stir into the pasta.     Here's the recipe! A sheet of ready rolled shortcrust pastry 125g garlic and herb roule 1 tbsp milk 400g *may vary depending on size* of tomatoes 1 beaten egg A handful of finely grated parmesan A large handful of crumbled Feta Salt and ground black pepper Lay the sheet of pastry on a lined baking tray Heat the oven to 200C Add the roule to a bowl, add the milk and beat until combined. Spread evenly over pastry, leaving roughly a 1 inch gap around the edge. Thinly slice the tomatoes *discard the ends* and add a single layer of tomatoes on top of the cream cheese. Fold over the edge of the pastry all the way around to create a crust. Brush with beaten egg and sprinkle generously with parmesan cheese. Crumble feta over the sliced tomatoes and season with salt and pepper. Bake in the oven for 20-25 minutes until the pastry is golden

    Crispy Halloumi Schnitzel I love halloumi fried in breadcrumbs, but if you cut it in half, it's a bit too chunky and if you cut it widthways it's too small...this technique is a great way to get them thin and beautifully crisp! This is a great way to turn halloumi into burgers too (I find the burger halloumi really difficult to find) You can always prep these in the morning and fry them off for dinner. *If you want to add a kick, just stir some spices into the breadcrumbs * I would LOVE to know if you've cooked halloumi like this! Recipe is below, A x Makes 4 Schnitzels 2 blocks of halloumi (cut carefully in half lengthways) 1 large egg beaten Golden breadcrumbs Oil for frying Place the hallomi quarters in boiling water and keep on a very low simmer for 20 minutes. Carefully lift them from the pan and place them on one side of a clean tea towel. Fold the other side of the tea towel over the halloumi and gently roll it out. When you've rolled it to the size you want, leave it to cool completely before moving. Dip each one in beaten egg, then place on a plate of golden breadcrumbs, making sure each side is covered. Fry for a couple of minutes on each side until crisp and golden brown.     Feeds 4 8 frozen potato waffles 30g butter 30g flour 450ml milk 200g garlic and herb soft cheese 4 frozen boneless, skinless basa fillets - defrosted (you can use cod if you prefer) cut into medium pieces 80g frozen peas 80g frozen sweetcorn 80g fresh spinach leaves A handful of grated cheddar cheese. Heat the grill to medium/high Place the potato waffles on a tray and place them under the grill. Grill on one side until golden brown. This should take around 5-7 minutes. Place the butter in a large non-stick saucepan on a medium heat. When melted, stir in the flour until it starts to bubble. Slowly add the milk a little at a time, stirring continuously. Each time it comes to the boil, add more milk. When all of the milk is used, stir in soft cheese until you have a smooth sauce. Season with salt and pepper. Stir in the pieces of fish, frozen peas, frozen sweetcorn and spinach. Gently bring to the boil. Simmer for 5 minutes, stirring regularly, until the fish is cooked through and the veg is tender. Pour the filling into an oven proof dish, roughly 28cm x 23cm Remove the waffles from under the grill. Cover the filling with the waffles, placing them cooked side down. Sprinkle with grated cheddar cheese and place the dish back under the grill. Grill for 5-7 minutes, until the cheese has melted and the top of the waffles are cooked. Serve immediately with salad or veg.

    Lemonade Fish Bites You've probably had beer battered fish before..well this uses lemonade instead!! They are SO easy and honestly it's the lightest, crispiest batter I've ever made! You can use any white fish for this, but I just defrosted a bag of basa fillets - really tasty and loads cheaper than cod. I've written up the recipe below - let me know if you'll be giving it a try over the weekend! A x Feeds 4 380g skinless boneless basa fillets (cut into bitesize pieces) Flour for dusting 75g plain flour 1/2 tsp turmeric 1 tsp baking powder 110ml chilled lemonade Salt and pepper Olive oil for frying Fresh lemon (optional) Place the fish pieces on kitchen roll and pat until very dry. Roll the fish in flour and tap off excess Sieve the flour into a mixing bowl and stir in the turmeric, baking powder and generous grinds of salt and pepper. Pour the cold lemonade into the flour. Stir with a whisk until smooth and lump free. In a large non-stick saucepan or frying pan, heat enough oil so that it will cover half the depth of the fish in the pan. When the oil is spitting hot, dip each fish piece in the batter until coated before placing straight in the pan. Fry on a high heat for around 2-3 minutes each side, turning every so often until the batter is golden brown and crispy and the fish is cooked through - thicker fillets might need a bit longer. Place the fillets on kitchen roll to absorb the excess oil, before serving.     Baked BBQ Meatballs This is a lovely lazy weekend dinner...and a favourite with my boys! They're so quick to make - just a couple of minutes prep and just over 10 minutes in the oven. I love having them with flatbreads, salad and couscous, but they're great in wraps too... I've written up the recipe below - let me know 👇 if you're going to try these! A xx Feeds 4 24 beef meatballs 1 tbsp smoked paprika 2 tsp chilli powder 2 tsp brown sugar Salt and pepper 2 tbsp olive oil Heat the oven to 200C Place all the spices and sugar in a small bowl, season generously with salt and pepper. Stir in the olive oil until smooth. Place the meatballs on a large baking tray. Drizzle over the oil mix. Roll them around the tray until they're all coated. Use a fork to press each meatball ball down firmly. Making a cross with the fork prongs. Bake in the oven for around 10-12 minutes or until cooked through.
