Must Try Recipes for Excess Tomatoes and Peppers! Homemade Pantry Staples.
I have all the tomato sauce, diced tomatoes, salsas and spaghetti sauce that I need for the next year. I am now branching out to get more homemade pantry staples in my root cellar from my own garden. This wasn't intended to be a Mexican food theme but that's what it ended up!
If you have ever wondered how to use those dried peppers/chili's that you see in Mexican markets then this is the episode for you. We'll be making a quick hot sauce for tacos, eggs or whatever you use hot sauce for, enchilada sauce for canning and using up some Anaheim peppers to make diced green chili's for canning. It was a busy day but oh so worth it and we used up a LOT of fresh tomatoes and peppers.

    N. Michigan update: I started tapping in January and stopped in April. Longest season ever and huge coloection and it produced the most robust and flavorful syrup I've ever produced. Definitely a banner year

      The flavor completely changes once the pepper is dried. I have tons of recipes where I use my fresh peppers and I also freeze some for later. I would like to learn how to dry them so I could use them in these types of recipes. 😊

      a) make sure they are not hybrids, as their seeds are often not true-breeders. b) warm soil/air... peppers, like tomatoes, need warm soil to germinate...> 55F ( > 50F for most tomatoes) c) Living at the 45th parallel in Western Oregon, we have to start them indoors or in a green house with warmed soil (either elec-pads or perhaps circulating warm water in tubes in starter beds.) Maybe a hot/active compost layer below the starts, but you have to keep decomp gasses off the roots (that will slow/stop growth) so maybe start them in a cloche over cut green cover crop mulch w/lots of active decomp bacteria added. Just a few thoughts.

    We’re down here in Alabama…have two older teens and a piece of property that’s paid off. Looking ahead to getting out of the burbs…this all seems like an option for my husband and I. Y’all are answering a lot of questions we’ve had. I like the idea of steel for the siding on a cabin. Low maintenance as we age, seems great. We’ve got the issue of HEAT down here 9 months out of the year. Wondering if a mini split or two would keep us consistently cool? Thanks for all you do.     Love your channel Barb. Your house is beautiful and very cozy. What more does one need? Just wanted to make you aware of a “crockpot” method you can use without added electricity in your off-grid situation. It’s called “retained heat cooking”, “hatbox cooking” etc. There are products one can buy like the “Wonderbag” which used to sell on Amazon. There are also thermos-type products. You can easily make your own too. The premise is that you heat up your dish, let’s say it’s a stew, or things you would use a crockpot for. Heat to boiling for a few minutes on the stove (in a cast-iron dutch oven) and then put the lid on and put the pot into your “hatbox cooker”. If homemade, it can be as simple as a laundry basket with a quilt inside. Put the pot in there, cover it up nicely, and leave for the day. It does a remarkable job. If you have not heard of it, please look into this as I think you will love it. Blessings.

    Hi peeps.. was watching jay and jens offgrid porch vid.. and thought I'd come see what you've got going on. I'm a Victron fan.. I'm in an RV here in S. Oregon for now. Just bought some land down in AZ where I'll be 100% off grid. I'm running 2400w and 1600Ah of lithium. I run everything off electric. I recently upgraded the factory powerhog fridge. It consumed 300w of AC, but replaced it with another Norcold model. It's 12v and uses less than 100w and paid $825 plus shipping for it. It has dual compressors so either one can be a fridge or freezer or just one of them. it's 10 Cu ft. It was the exact size as the previous one. Also just switched out my Pioneer 9k mini split with an EG4 12k Hybrid. It runs directly off solar (90v min) and\or AC. So far so good. In the 3 days It's been running.. the app says it's saved 8403Wh of AC. Money saving game changer for sure. I also have been running four BB100Ah batteries for the past few year. One of them began to fail as their sealant leaked some water inside and it was warrantied eplaced with a brand new one. So I switched brands and now have Four 400w batteries. I like power and use alot of it.

    Why'd you choose 12V? 24V allows pretty much the same selection of DC appliances with increased efficiency, reduced wiring costs and cheaper charge controller for same power. 48V (you already have 4x12v batteries) has even further reduced wiring costs if you have longer runs, but few appliances available-need a buck converter to get down to 24 or 12V for common appliances. 48V not always cheaper for the same power since less economies of scale. Inverters get more efficient the higher the voltage. 12/24V about the same price for the same power, but 48V less common so tend to be more expensive. I have roughly similar needs to yours but chose 24V, so I'm curious as to your reasoning.

    How do you find that 12 fuse box? I had a 6 fuse version and found that a small voltage remains even when a fuse is blown/removed. I was scared to have a blown device that would still be receiving power albeit small. These all seem to be of the same design regardless of the company selling them.

    Solar is the one area that I have a hard time wrapping my head around. Once I find my land I plan to build the outhouse first and that's a great idea to put a small system on there. I'll learn the setup before I make a $$ mistake on the house.

    My Mom told me that when she lived at home with her parents, she and her mom would swap off on who would be doing the canning of the tomatoes. Depending on if one or the other was going through her monthlies.

    Where do you get your gallon jars and do you make your own labels?

      I got the jars from Azure Standard and the labels are just cut off the bags of dry goods and taped on. And yes, the meat goes in cold with no liquid. Thanks for watching. 😊
