I am taking a break from my very small micro bakery until January as I have health issues so this videos has lightened my day! I need info on doing sourdough in very hot environment - I'm from South Africa in the hottest town and I'm struggling 😂😅 With the heat and severe pain in my joints I failed miserably in baking on the 24th and had to refund everyone... It was the hardest bake day thus far

How much time to get them all baked off in the home oven?
@@lawrence1960 it depends on how many I have to bake but in the home oven it take about 45 minutes and I can bake 5-6 at a time

@@irondave103 yes if you can put a pan under your Dutch ovens to help and move them away from the bottom as much as possible. If you are baking like I am with some on the top and some on the bottom rotate them mid bake.

That’s a cool idea to use your boule recipe into a loaf! Is it the same amounts of ingredients? Like for example, I use 1000g flour, 650g water, 250g starter & 24g salt for two boules. Would all that be only 2 sandwich loaves? Or would you take the amount you use to make 2 boules and have it make 4 sandwich loaves?

Without a big mixer, for large batches I would try a dough hook or even a stainless steel paint/concrete mixer from Home Depot with a good variable-speed drill! If I ever try, I'll let you know how it goes! Maybe start with less flour, and mix in the balance at the end with my hands...

@@teabogut8447 hey!! It all depends on what your putting in your space. My oven is really big so I needed more space. My bakery is 15x14 and believe it or not I feel like it’s already too small! I say go big if you can.

Question! Have you ever forgotten to salt a batch? What did you do? I remembered after they were in bannetons for the night! So I sprinkled the salt on top before the bake. I hope it works.

Nice! With the Lodge ones, I usually put the bread on the shallow side and use the deep pot for the lid, but it works both ways. :-)
