FIRST COOK ON THE CAMP CHEF XXL PRO, HAD TO BE BRISKET!
Very excited for my first cook on the new @campchef XXL Pro Smoker. I am really impressed with the difference the smoke flavor the XXL Pro produces. The added wood chunks really set it apart from any other pellet grill/smoker. Pellet brand choice will also make a huge difference in what your result can be, and that's why I always use Bear Mountain Pellets. The Kinders Woodfired Garlic seasoning was a great choice for brisket for an extra flavor outside of the usual SPG.

I made a smoked version of my copycat Chipotle Barbacoa... I call this the weekend version.. It's a little extra work as opposed to the crockpot version. I never imagined how delicious this could be! It's an extremely easy recipe and hard to screw up. The only thing that I would change is to grease the pan and potentially keep it on the final cook a bit less. Regardless, these would be a hit at a party and would make a great appetizer. Sausage can be tricky to make. Store bought sausage can be made with some questionable cuts of meat.     I ordered the XXL back on the 9th. It came a bit more damaged exactly where your damage is at. My dent completely compromised that running seam. I received my replacement today.. damaged AGAIN in the same exact spot. Compromised seam and all.

      You know, the shipping issue are a damn shame because this is such a great smoker.. my second one came slightly damaged on the faceplate from the ash dump rod… I just swapped it from the old one and called it good. I’d be curious what Camp Chef tells you…

      @LDsBBQnCookin , so according to CC, I had to donate the first smoker to retain the warranty on the new smoker that was being sent out. I did just that and dropped it off at the firehouse. I received the new smoker yesterday and called CC after I noticed the damage. Mind you, I was a bit more irritated this time around. If I'm paying nearly $1k for something, it better not come kicked in. The lady on the phone said, "we can't guarantee our products won't get damaged upon delivery. ".. what an absolutely insane sentence to deflect that fact that you have piss poor packaging. When I suggested that they probably would have less "ding and dent" complaints had they cut their profit margins ever so just to invest in better packaging and/or materials, the woman responded "yeah, well...do you want to return it or not?" I was supposed to get a call from a supervisor yesterday. However, within the 6hrs they had before closing, I never got a call. So, I'm going to call back in a minute or two. At this point, if they send me another smoker, I don't know if I'd bother donating it. I'd lose my warranty.. but, at least, I'd hopefully be able to Frankenstein what I need to.

      @@Ruins302 it was the same situation for me, i had to donate it to the firehouse which I did, but not before swapping that face plate. That was a strictly cosmetic issue so I just swapped. That being said the I don’t know what I’d do in your case… any places sell them around you locally?

      @@LDsBBQnCookin Update: CC is having FedEx pick the smoker up tomorrow. They will have another one delivered via freight and pallet in about 5-6 days. There's a Cabelas about an hour or so away from me. If this new one comes kicked in, I'll just ask for a refund and go up there.

    I grabbed two small washers from work and placed one on the body side of the spring and the nut side of the spring. It’s a much smoother operation of the smoke box flu.

      @@LDsBBQnCookin it’ll need to be a small washer, if it’s to big in diameter it will interfere with opening and closing of the smoke box

    Great video and some good-looking sausages. The only thing I would have done is to put them in an ice bath. Right away after taking them off to stop the cooking process. And to keep the casing from wrinkling up.

      I have seen that done in many videos. That may be something we’ll try the next go around, it was not something that they did in Poland when making sausage though so we kept it as close to that process as possible
