Get the roof sorted, check the foundation to make sure its not sinking or has rising damp, then check the windows with a smoke machine to see if there's any heat loss. Make sure the carcus of the house is solid and not leaning then restore otherwise you could lose a lot of money. Best of luck to you both.
You'll notice the difference of noise levels and retaining heat with the double glazing. So much quieter and warmer

"Excessive home for two" is right. Looks like a "money pit" - unless you are willing to have a comfortable separate living space & rent out the rest as apartments/flats & space for events like wedding or possibly an on site restaurant. Good Luck.

Why didn't you finish cleaning roof as all that crude is going to go in new gutters again and block them up again?
What are your jobs to be able to afford owning houses before this ? You must have got on the housing market young, which is a feat most young people can never do or dream of doing. Just think there needs to be more transparency on how you’re actually doing this, I assume your fella is a tradie but what about you ? Did you get a large inheritance to put into it ?

A nice picture rail around the top of the new wall in the old chapel would look great. I love how you are preserving so many of the historic features. If you were planning on having servants then the second staircase would be useful but having another two or three rooms would be of more use. That old stove in the old kitchen is GORGEOUS! I hope you will be preserving it in some way. 🤔🤔😁💜❤️ You have already done SO much hard work!! The alcove bed at the top of the house sounds nice but when you have had to make a bed that is enclosed by walls on three will be a real pain. Can you make it into a reading nook and the bed closer to the centre of the room?
The sandstone elements are beautiful. For the stained glass window maybe have grape vines going off into the distance with a table in the foreground. On the table have wine bottle, glasses and a board with bread and cheese on it. I can picture it so clearly. I love the work you are doing.
