The southern indian varieties of biryanis are a little on the spicy side so the yoghurt helps. The northern biryanis are more milder & perhaps may or may not need to add yoghurt

But i guess you will not get authentic biryanis of another place in just one location as some of the local ingredients & methods of cooking will be missing. So if you are looking for authenticity then its best you visit each of the city & try it out in each particular city. Some cities like Hyderabad have more than one type of biryani

Dum biryani is a method of cooking not a type of biryani. A butter chicken biryani is more of a modern twist to multi century old dish.

Chicken Biryani is good, but nothing beats Mutton. Also most major Mediaeval Indian City which was administered by Muslim rulers will have their own version of Biryani. But yes you will also find some Hindu based Briyanis in south india as well.
