Rabbits produce a lot of meat. Chickens provide meat and eggs. A good dairy goat is worth its weight in gold.

Cows often produce way more milk than a family can use. Unless you can trade that for something else, you are better off w the smaller animals.

I will chip in here, just to contribute/help - sharing MY experiences. We have a small farm, about 10 acres; however, the animals are kept in lots of about 1/2 to 3/4 acre. We have everything. OK, here's the input. I was TOLD that sheep are robust; they are NOT; but, they certainly have more meat on them than a goat but they don't tear up fences like goats do. Some goats, as you mentioned: Nigerian, etc. ARE easy to keep and ARE more friendly but they are NOT very meaty. Rams (male sheep) can butt you, especially if you bottle-fed them. So, I'd pick goats over sheep but get rid of the trouble-makers. Quails - yes - this is a hidden jewel. A quail egg hatches - and 60 days from that, they are laying eggs!! Furthermore, I've seen many of our quail lay TWO EGGS PER DAY - YES (coturnix); also, quail are amazingly easy to skin out (wow). Pigs...some behave and some are a big problem as they are smart and some have a bad tendency to dig under fences. Chickens/ducks/geese/turkeys: Turkey are ONLY ok, if you harvest them as SOON as they are adults (they peck at others and eat way too much; and, they are incredibly stupid and you can expect more than 50% mortality, due to stupidity, like drowning in 3 inches of water, up to their bellies [suspend your water].). I actually will lean towards ducks, just over chickens, because they lay just as much (the common white duck) and they don't crow at 3 am. We are chicken pros...and SOME breeds are winners: Barred Rock and Ameracaunas are winners - ditch the roosters. Cows on 3/4 acre? Yes BUT, you have to purchase hay. The breed of cow makes a HUGE difference. If I was starving, quails are a TOP choice because they breed like rats and are easy to deal with. Rabbits, mmm mmm - way too much manual labor - but, we do have them but only in cycles (raise / harvest - take a break [learn and repeat]). The last point is critical: KNOW your preditors and how to deal with them. Foxes (smart; they mix their schedules; and, they kill for sport) are the WORST (worse than bobcats, raccoons, opossums, stray dogs). Hope this helps.

And they forgot donkeys in the Bible! Jesus had his famous ride into Jerusalem on a donkey, His pregnant mother Mary rode to Bethlehem on a donkey… The narrator also doesn’t seem to know the difference between a donkey and a mule! Female donkeys breed with male horses to produce a mule which is sterile. Poor birthing little mama donkey! Mules are huge!

Merino sheep are dreadful mothers with a tendency to abandon lambs, and you need to get them shorn. Their meat is good but will become stronly muttony as they age, unlike my dorpers. Its a dorper characteristic that older ones dont get so strong and gamey.

My chickens started as a mix of Australorps, Buff Orpingtons, Barred Rocks and a few Rhode Island Reds. That was 14 years ago but we incubate a dozen or so each spring so, they're now wonderful farmyard mutts 😁. They lay 4-5 eggs per week and the cockerels go in the freezer at 12-14 weeks old

Yes, you missed a Lot. Damara a very colourful, fat but long tailed African breed that where used to create the Meatmaster breed by crossing to White Dorper. White Dorper was also left off your list, it was created at the same time as the Dorper but from Dorset Horn and Van Rooy sheep thus it being just white. Also you mentioned that Dorset Horn was part of the Dorper but completely left out that the shedding and black face is because the other breed used was the Black faced Persian. The newest hair breed that is very popular in Australia is the Australian White which has now made it to the USA where they are calling the ones born there American Whites. Aussie Whites where a 4 way cross being White Dorper, Texel, Van Rooy & Poll Dorset.

Funny that most of the cattle he talks about are the standard breeds that are raised on most farms. South poll are bred to get fat on grass and long horn cattle are hardy and eat most anything but grow slower.

When my parents were living in central Texas, the local HEB did not carry lamb. Somehow I got connected with a woman in her late ‘80’s who had a small herd of brown sheep that she said were “next to wild”. She had one processed for us. It was the best lamb I have ever eaten. Pretty sure they were Barbadoes. Brown, hair sheep, no horns, foraged a lot. Central Texas is HOT.
