Death represents the end of life, where as the Lich never wanted life to exist in the first place. The Lich represents destruction.

Yeah, the Lich wants to destroy all life in the most efficient way possible. If he just goes around killing people, he would attract enemies who could stop him.

The Lich has always been one of the villains I’ve seen so much potential for. I was so excited when they brought him back for Fionna & Cake.

in the fionna and cake episode, jerry the lich got what he wanted and killed everyone. He was sad and lacked fulfillment because there was no one. He complains to golb later in the episode and dies by her hands

The lich is like the number 0. He doesn't represent a figure or a number of entities, he is just his own concept and doesn't just represent his own self, but rather the idea of who he is and what he could be.
