Hi Friends, My name is Robyn. I am a mom to three young children, a rancher, homesteader, and cheesemaker. On this channel I showcase our life on the ranch/homestead, and share tons of cheesemaking and milk cow content.

Please look into the reason to not use black plastic buckets. Black plastic (our cooking spoons etc.) is said to have recycled electronic parts, which is toxic due to the fire retardant used in computer components. (which is highly toxic) Please look the plastic issue up. I have removed all black plastic from my kitchen (myself) and that included my coffee maker. Great idea, thanks for sharing. ❤❤

I’m curious as the the temperature for your cheese recipes. Doesn’t the higher heat’s kill all the beneficial bacteria? There such a “gut health” movement these days so will this cheese benefit the gut or not?
No this one won’t, it does kill all of the bacteria but it is a necessary heat to extract the whey protein in this recipe. Other recipes on my channel will help you support gut health but this isn’t one of them:)
Do you add cream or half & half for a creamier texture?
You can if you want, I just use whole milk from my cows which contains a lot of cream.

When your first clabber happens after about 3-4 days, is it okay if only it is partially clabberated like on the top? Or are you supposed to have the whole jar clabbers before you take a spoonful out and feed to the next jar?

Delightful video, because so many instructions about making cheese make it seem so complicated. There is one other important use for calcium chloride and that is when you make a brine to salt cheese. If the brine has no calcium chloride, it may pull calcium from the cheese and leave you with a very "slimy" surface on the wheel of cheese. Similarly, if the brine is less acidic than the cheese, you may find that some of the acidity in the cheese is "pulled" into the brine solution. It's like a warm area next to a cold area: the warmth is pulled from the cold material until both areas are at the same temperature. So, we generally add some white vinegar when we make a brine solution.
Thank you. Quite understandable. Somewhere I recently read of and apprentice Baker, who forgot to add salt to his large batch. So he had to throw it out in the dumpster. Well, it started, expanding, raising the lid and making strange noises. And the police were called to deal with this situation. Chuckle

My clabber culture does great for 2 to 3 batches then I get a batch with white and pinkish mold.... why?!
Regarding your chase cave, do you have any specific recommendation for transforming the fridge into a cave? Of course the temperature control, and I guess with vacuum seal bags you have your humidity on point What about the mechanical part? Everything runs good? I am talking about the cicle of the fridge as well

Great video Robyn! This is quickly becoming one of my favorite versatile cheeses too. I tried the clabber method without any rennet once and it was a pain! It took forever to strain and it kept clogging up my cloth, this method works excellent and is my go to! PS - I'm enjoying hearing about your book writing process in your email newsletter.

Thanks for your video.. What do you feed your cows? Grass and supplemental feed? organic? I am trying to source raw milk in my area and no one seems to tell what they feed their cows.. I am sure what they eat will directly have an impact on the healthy bacteria in the milk. Just want raw milk without any contamination from any pesticides.. I am just trying to start a clabber culture.. :) Have you tried Kefir too? I ordered some starters but heard it is way more sour for cheesemaking..
Clabber seems like another sourdough nightmare :( Also after hearing about clabber I was expecting not to see any rennet.
What is the difference between quark and fromage blanc? They are both lactic style cheeses?

Quark is a German cheese and I actually make buttermilk and then keep it warm till it separates and then strain it. But I'm definitely going to try this method.
I didn't know I could make Boursin with quark!🤯 Boursin is my favorite cheese to buy at Christmas and I can't wait to make my own. YAY!

Wow, she did excellent, great job! I too am a proponent of not feeding while milking. I actually break my rule with my seasoned, well behaved cows. They are allowed to have their grain while I am milking but only because they know not to move a muscle. Heifers though, only get it afterwards and only if they were well behaved. Thanks for the video, I have an up and coming heifer due to freshen in the spring that I am a little nervous about training. She isn't the first I have trained, it has just been several years since the last and I know what dragons they can be in the beginning! This little gal I have coming up is friendly but kicky in the stanchion, so hopefully it won't be too much of a battle to overcome. Thanks for the halter tip, that is not something I have tried so I will see how it works next spring!
My favourite part of the video “I don’t feed my cow grain while milking” 😅😂 new cow owner here and definitely thought it would be good to feed the cow while milking. I learned fast that was a bad idea. My cow does this annoying head swing when she wants to be pet or scratched. This week her calf started trying to headbutt me while I’m milking. I have a small milking machine and it my cow sometimes tries will start milking fine but sometimes kicks it off. Then I check to see if she has milk, thinking maybe she’s empty and I missed something. Nope. Still lots of milk. What would you do if they kick? Wow after reading over my comment this experience just sounds magical. Whimsical really. 😂. (I will just keep telling myself this is fun!🎉)

my buttermilk always spoils before I can use it! I don't want to drink it all cause of the calories but what other uses are there? Other then using in baking or pancakes..ect.
Thank you for showing the knot and in slow motion😊. Our Belfair heifer is almost one year old. She is very friendly can we can pet her. I definitely need to start training her. I have milk goats so hopefully some of that knowledge will translate over to my Mocha.
