    Dried macaroni's invention and success as a food was largely owing to the fact that it is naturally preserved through the drying process. Even without modern preservatives (which good macaroni shouldn't have), in the right conditions it should last for years. This is also why Genoa ultimately became a macaroni production center despite not producing the wheat -- macaroni is an ideal food for sailors, and the Genoa-based merchant marine relied on dried macaroni. Either way, no reason to throw away expire pasta unless it has bugs from improper storage.

    Thank you for this excellent video. I lived in Staten Island from 1979-1987. I’ve always enjoyed the beauty and history of this unique boro. I enjoyed seeing all of the contributions made by the Italian people throughout the history of the island. I also admire and respect the Italian Americans for their love of the USA, while preserving their Italian heritage and it’s culture. Thank you again for this enjoyable presentation. 🇺🇸❤🇮🇹

    I thought the conversation about the Italian American experience was so comforting to me. Was touched due to my experiences growing up in a Sicilian community in SF Bay Area. responded on Facebook … then the negative comments came, basically “you are American!!!” (Which is a given) other folks just went off. Goodness. I’ll still listen but dang. Thought I’d try & say thank you here.

    My grandparents immigrated last century, so I am second generation in America. I love keeping our traditions alive and more power to whomever wants to celebrate their Italian heritage.

    You have attachment to your family and traditions not so much the country of Italy. And Italy doesn't even claim us 2nd/3rd generation, grandparents came and only spoke dialect. I know I'm Italian by culture/blood but Im American. Thats our immigrant story. Look how much this Half Italian half Irish guy/hoast identifies and holds it.🇮🇹✌🏼🇺🇸

    FYI, the Southern Italian diaspora mid to late 1800's, post 'unification', spread to Canada as well. My paternal grandparents settled in Toronto in 1890's, where there was already an established Italian immigrant community.

    War put the fear of death and the fear of God into the WW2, Korean, and Vietnam war generations. So much of those generations lived through the wars but this generation does not know the fear of the existential threat posed by Germany, Japan, Korea, and Vietnam. If we did I think we would have more conscience.

    Awesome guest. One critique though is PLEASE don't push the fluoride conspiracy🤦‍♂️ You guys are WAY too smart for that. The amount of fluoride you would need to consume to see any potential negative effects vs the minuscule amount that is actually in tap water is laughable. Countries in Europe that stopped putting it in are now reconsidering putting it back due to skyrocketing numbers of serious dental issues seen in children, especially in impoverished areas.

    What a effortlessly cool and fascinating guest!👏 Nobody wants to hear this, but it is not an accident that the family is so non focal in the US. In fact, with the evaporation of "the family wage", virtually no maternity/paternity leave, no guarenteed healthcare, and astronomical costs of housing and education we are the MOST hostile country in the western world to families because "family time" removes our labor from the job market for far too long to be tolerated and for this we are punished at every turn in order to discourage it alltogether. This is NOT the labor market of the 40's through the 60's anymore folks so we need to stop beating ourselves up for not being able to overcome an entire economical system that is pitted against us
