I use this silky buttery milk chocolate ganache for EVERYTHING and all you need to remember is this simple ration 2:1:1 2 parts chocolate : 1 part butter : 1 part cream. This is SUPER handy as all bars of chocolate can be different sizes, so you can base your ratio around the amount of chocolate you have. e.g for every 100g of chocolate, you need 50g of butter and 50g cream. For this cake I made a HUGE batch and had 720g of milk chocolate. I then used 360g of butter and 360g pouring cream. You can use this ganache to ice cakes, spoon on top of an ice cream Sunday, topping cookies, roll into truffles, occasionally I even whip it up in my stand mixer to create a light fluffy ganache for filling or icing cupcakes. Place the butter and chocolate in an heat proof bowl over a pot of simmering water to create a bain-marie. Keep the heat low and make sure the water isn’t touching the bottom of the bowl. Gently stir until the butter and chocolate have melted. Remove from the heat and stir in the cold cream. Keep stirring until all the cream is incorporated and the mixture is lovely and glossy. Allow to cool at room temperature, stirring every 10 mins or so until set. You can make this process quicker by transferring the mixture into a cool bowl. It is best to make this as you want to use it, however, if you did want to make it a day in advance, lay a sheet of glad wrap directly on the surface of the chocolate (the helps prevent a skin forming) and store in the fridge. Remove from the fridge an hour or so before you want to use it. 🍫🤤
