I don't know about everyone else but one of the most amazing things about Pai, is that she makes mistakes on camera and doesn't hide it. It normalizes mistakes and shows even trained professionals make mistakes. Takes a lot of pressure off the "normal" person, if you want to call us that. I literally just made this right now and it is hands down the best fried rice I have ever had! It's so flavorful it's insane. I tripled the recipe because I already knew my family would want leftovers. Thank you for this recipe. You're amazing!

Nice Video again :), one question i tried to make fried rice in a regular pan on my regular stofe. But it did not go well. Would you recommend doing it with a wok on flames?
Gai Larn (chinese broccoli) or other Asian greens, cabbage, carrots, corn (popular with children)... the trick is figuring out how long it needs to cook so it's done but still tender-crisp.
I think if you add some pickles and the prawn crackers or kerupuk, it'll be super yummy!! Salted-egg butter sauce squid is my favorite! Can you please give that recipe a try?
4:52 This is why I always double, sometimes triple-up on my shrimp, whenever I make fried rice. But I got somewhat lazy over the years and just use a smaller sized shrimp for stirring into the rice....... and then the larger-sized shrimps go on top of the rice, at the end. Shrimp is expensive, yes.... but for most of us, it's not like it's an everyday thing.......... so yeah...... if you're gonna cook with it, GO FOR BROKE AND ENJOY!!!! ;)

Ohh thank you for the suggestions!! I used half a dozen of salted egg yolks recently and the whites were sitting in my freezer for a while. Now i can put use the remaining whites😀👍ill try it with congee and the papaya salad.
Mmmm...duck eggs. When my grandma was still around she'd make me Chinese meatloaf with salt fish because it was one of my favorite dishes, we'd eat it over rice with fresh boiled duck eggs on the side. We lived in the city but my grandparents backyard was big enough for a couple pet ducks who'd lay enough eggs to have a meal about once a week. I need to make that someday, it's been years since I've eaten either.

have you ever cured raw egg yolks? Super easy. Blend equal amounts of salt and sugar, place yolks in the mixture, cover with mixture, pop em in your fridge for 5-7 days, then slow bake them @ 200 degrees to get rid of the moisture, you can shave them with a microplane over salads, pasta, etc. Very delicious and healthy. :)

Are these 'salted duck eggs' the same as Hong Kong 'century' eggs or more like the sugar and salt (and some spices) cured (chicken) egg yolks that I make at home?
You're streets ahead of most, making your own cured eggs at home! From the sounds of it, if it uses lots of salt, it would approximate the regular salted egg we buy from the shops. Salted eggs are just salted (preserved) in water & salt. When cooked, the salted egg looks almost like a normal egg, where the whites are white and the yolk a deep orange. It almost tastes the same, but it's just quite salty and a bit more rubbery. The "century" egg uses an ash & straw method that cures the egg and turns the whites to a mysterious translucent brown and the yolk is a strange greenish shade! The smell is also much more pungent and almost ammonia-like... definitely an acquired taste. I'm Malaysian and I don't really like century egg, and if it's on the menu, I choose something else!!

Hi Alexey! These are cured with salt as opposed to cooked, but Pailin says she hasn't made them herself before - she just buys them (particularly as it's hard to find duck eggs here). You can actually do it but the rice should be chilled and not mushy and the pan should be hot so the fried rice would not be too sweaty
I second what he said, you don't need a wok on flames. But pan has to be large, hot, and rice not made with too much water.

Salted egg yolks are great friends with butter. Try and substitute the vegetable oil with it and you'll be amazed.
