That prompted an online search for a better recipe/better instructions. This panettone is simply sublime - I am savoring every bite of it. Is it okay to halve all the ingredients to make a smaller panettone?

For 2nd rise is it ok to let it slowly rise in the fridge. And the next day will continue with the 3rd rise process?
I haven’t tried it so I can’t confirm but if I’m not mistaken (not totally sure) somebody said they did it like that and it worked. Do let me know how it goes if you tried it.

Look for one with high protein, 12-13% of protein should be good.

Your recipe is the only one that had works for me and the panettone is wonderful! I could not find the same candy fruit so I used what was in hand lol came out delicious either way. Thank you 😊 I used mandarin paste instead of orange and lemon peel, is just so good and fluffy 😋
