Any kinilaw the ginger enhances the taste. Lots of ginger (grater/sliced) is more delicious, of course there is also onion and chili. You can add also some slice tomatoes to make your kinilaw colorful and if you like the taste of tomatoes. Too sour if that much vinegar. To neutralize the acid, you can add Alpine evaporated full cream milk, Nestle product. Alpine is not sweet, Alpine tastes creamy for kinilaw. Sweet evap milk is not good for kinilaw, so Alpine has been tested for kinilaw. A little can of Alpine is enough for that kinilaw. After you mixed all the ingredients and tuna meats, just add the Alpine and mix it well, the milk will thicken due to the vinegar. Then put it in the refrigerator or freezer for 30 minutes to cool and a little bit dry the sauce due to the cold then serve it. Tuna and bangus are delicious for this kind of kinilaw recipe.
