    Interesting that the older masters wear protection: They have been working long enough to know what damage even a small slip can do !!!

    This video is a prime example of why butchery is not an appealing industry. No excitement, boring tone, dressed like a outdated muppet. Most chefs can do basic stuff like this. Do a nice tray to display, show some speed and try doing it from the loin to show some real skill. Stuff it and make it visually appealing.
