Ingredients:
#1 Peanut Butter Blueberry Cookie for One
1 tsp coconut oil
1 tsp peanut butter
¼ tsp vanilla
1 tbsp agave syrup
1 tsp raw sugar
pinch of salt
pinch of baking powder
3 tbsp spelt flour
1 tbsp almond milk
blueberries, fresh or frozen
→ serves 1
#2 Grilled Chocolate + Raspberry Sandwich
a bit of coconut oil/vegan butter for greasing
2 pieces of toast
1 tbsp vegan cream cheese OR 1 tbsp plain vegan yogurt
2 tsp raspberry jam AND/OR a few frozen/fresh raspberries
2 tbsp semi sweet chocolate chips
→ serves 1-2
#3 White Bean Chocolate Chip Cookie Dough/Cake Batter
1 can white beans, rinsed + drained (240g)
1 cup oats, small cut (90g)
⅓ cup raw sugar (75g)
3 Tbsp agave or maple syrup
1 tsp vanilla
¼ tsp salt
2 ½ Tbsp melted vegan butter or coconut oil
¼ cup non dairy milk (60ml)
¼ cup chocolate chips, or more if you like (40g)
→ serves 4-6

Bread flour, egg, milk, yeast, baking powder, and baking soda!
#1 peanut butter blueberry cookie
-Coconut oil
-Peanut butter
-Agave syrup
-Vanilla
-Raw sugar
-Salt
-Baking powder
-Spelt flour(three tablespoons)
-Almond milk
-Blueberries
(12-15 minutes into the oven)
#2 Grilled chocolate and raspberry toast
-Coconut oil/Vegan butter
-Vegan cream cheese(A tablespoon)/vegan yogurt
-2 toasts
-Raspberry jam
-Frozen/fresh raspberries
-Chocolate chips
#3 Chocolate-chip cookie dough
-Oat flour
-Salt
-Vanilla
-Raw sugar
-Agave syrup
-Melted vegan butter/Coconut oil
-Almond milk
-White beans/chickpeas
-Chocolate chips

Yes I just discovered that white beans are better for deserts than chick peas. I just used them in a peanut butter cup pie with PB2 and not taste just a good filler.

@@Priscillasubira little late to the party but you would use cannellini beans. I also use them in place of cashews in most recipes.

Side note: while using a microwave may not be as “natural,” or you may be worried about the effects of its radiation, it is still one of the most energy efficient ways to heat things up. Using the oven is actually pretty wasteful as it takes a lot of energy to heat up that entire space, and the stovetop is slightly better. If you want to conserve energy, the microwave is the way to go!
PS not commenting this to be judge-y or anything, it was just a fact that surprised me.
The doors of the microwaves are built in way that they would protects us from the radiation. So, it's safe.

Do it!! Start slow, find replacements you love, you'll feel so much healthier. Find a community of people, so it's not as overwhelming. Would recommend starting with a vegetarian diet and cutting out the easiest things such as ham, beef. Milk, butter, cheese. Everything is soy now. Goodluck you !!! ☺
Avocado Lester tysm! I am actually on a vegetarian diet atm :) and I don‘t drink milk anymore or eat dairy joghurt.

For those of you wondering about white beans in the cookie dough: just made it and you can't taste the beans *at all* but they give it a really nice consistency/texture so don't leave them out! And go make the thing, it's so yummy.

Just tried the cookie dough and I’m honestly DELIGHTED!
I’m not actually vegan but I wanted a healthier alternative and it looked perfect.
A tip: microwave for about 30 seconds before you eat it: it REALLY helps the texture.

Actually I love bean cookie dough! I often put less sugar (and ingredients) and eat it as breakfast. High protein, high fiber breakfast that's sweet @

@@MothCreature13 so good for breakfast! I make chickpeas "cookie dough" for my toddler's breakfast (with less maple syrup and no chocolate chips) and with maple syrup and dark chocolate chips for me and it fills us up for hours. I add oatmeal in it and it really starts the day perfectly ♥️

Wow the cookie is super similar to my improve cookies from this weekend, i used fig jam instead of sugar, and melted the first part au bain marie. Then baked the balls on a sheet, turning half way to brown both sides, they were amazing 😍

Just made the cookie dough (using 1/4 cup sugar instead of 1/3) and it is so delicious! It also seems much more filling than regular cookie dough, so you get your fix without going overboard.
