Amazing Twisted CHOCOLATE & NUTELLA BABKA Bread Recipe & Tutorial | Cupcake Jemma

- I'm back in my kitchen and I'm gagging to share this recipe with you! It's for one of my favourite breads, Babka, which I can't believe I didn't even know existed until just a couple of years ago. Once I tried it I was hooked, so I thought it wise to learn how to make my own! And now, having fiddled around with the recipe to get it just right, I can pass it on to you guys.
Important note: maybe it's because I'm pregnant, or maybe I just lost my mind a little during filming, but there are some instructions about how to freeze your babka dough if you don't want to bake two loaves at once. However, they make very little sense! Haha. So please find instructions below, if you want to do that.
INGREDIENTS:
530g plain flour (plus extra for rolling out the dough)
100g caster or granulated sugar
1 tbsp instant yeast (aka quick yeast or easy bake yeast)
3 lg eggs
60ml whole milk
60ml water
¾ tsp salt
150g butter, room temp or soft
300g Nutella
100-200g choc chips (depending on how chocolatey you want it!)
For sugar syrup...
100g sugar
80ml water
INSTRUCTIONS FOR FREEZING DOUGH
This recipe is for 2 loaves (halving the recipe doesn't seem to get great results). So if you don't want to bake two at once, you can follow the recipe up until the shaping part (the spreading, the cutting and the twisting). Pop both twisted loaves in to separate loaf tins. The one you want to freeze, simply wrap the entire tin well with cling film and put it in the freezer. Then, when you want to bake it, take it out and cover it loosely with a tea towel or something similar, and leave it for several hours at room temperature. It needs to defrost, then prove so this can take a while. Once the dough looks proven (it's almost double it's original size), you can bake it as instructed in the video. PHEW!

I love Babka!!!
The options are endless with a good Babka dough, I once made a Peanut butter and jam Babka and to get layers instead of a PB&J mix I split the dough in half, rolled both halves out, put PB on one half and then covered it with the second one, then I put jam on the top one, rolled everything into a log and placed in the freezer for 10-15 minutes before I cut it and twisted, this way nothing mixed up inside and nothing spilled out.

just made this, and it is SO. GOOD. the second proof does take a little longer than other breads, which is typical for babkas so don’t worry. you also don’t need to wait for it to completely cool down before cutting, I let the loaves cool for about 10 minutes in the pans and then for 30 min on a wire rack. It was cool enough to slice but still warm in the middle. very great recipe and video!!!

Yum my favourite!! I make it always at home for our Shabbat I use either Nutella and a mix of chocolates, or cinnamon sugar mix with a cream cheese ontop. In Hebrew we called this עוגת שמרים which means just yeast cakes! These really are my favourites! I love to use fresh yeast! So happy to see you back in the kitchen! ❤️❤️

I have never tried babka but I am trying this recipe! Waiting for the dough over night now. One loaf will be the Nutella and the other loaf will be biscoff and white chocolate chips. So excited!
Love this, why I always think of changing a recipe is beyond me, here I go...thinking an intense orange Lindt chocolate bar chopped an swapped for the chopped chips would be really good. I recently found The Great British baking show on Netflix here in the states, I binge watched 2014 - 2017, it's been a blast, watching more tonight. Side note...you look Fabulous, hope you're pregnancy is an easy one, my daughter had terrible heartburn and a baby born with a ton of hair.

Oh I just made my first babka (with dark chocolate filling) last week and directly a second one two days later, it was just too delicious!! :)
This was delicious. I cut it in half and did half chocolate and Nutella and half cinnamon sugar. Both were very good. I baked the bits I cut of the ends, a little chef's treat.

I just made this but using your Soft Cinnamon Rolls recipe instead and ended up with a delicious cinnamon babka with glazing on. Too delicious to describe and perfect for a wet and rainy day like today.

Just a word of caution, when kneading the dough with a kitchenaid after adding the butter, try and keep the speed at level 2. Keeping your mixer at medium high for 12 mins may cause damage to your mixer. Something in my kitchenaid ksm175 just broke… I was 9mins into the kneading process at medium high speed :’(

Yeah high speed is too much for kneading dough. For starters it won’t even knead it properly. Medium at the most

Just a tip if you use a kitchenaid, if you make a dough and use a setting over 2 do not go away from it. It can move and fall on the floor. It did for me once and made a giant hole in my floor. The kitchenaid survived, the floor did not. Then I saw it saying in the manual that it wasn’t recommended with a speed over 2. I still use a higher speed with doughs that need it - I just keep my eyes on it! 😂
Oh wow! I’ve never had that experience. We use them all day long on high speeds and they do wobble and shift a bit but never fall off the counter! Not yet anyway! 😂
CupcakeJemma My husband still teases me about that when I bake. «Careful with the floor» 🙈 Could have been an expensive trip to the bathroom, but we had plans on changing the floors any way so I was just happy the kitchenaid survived 😂 for sure quality!
