    Very well done! Hints for deep frying, though: Never fill the pot more than half full with oil. After that, it's best to take a scoop of your raw fries (or whatever you're frying) with a slotted spoon or your tongs, and lower them into the oil rather than dumping from a bowl. Give each scoop a few seconds to boil off the worst of the moisture they have on them, then lower in another scoop. This helps keep the oil hot and keeps the amount of water boiling off at one time smaller so it doesn't make the oil boil over. But well done on persisting, even after the boil-over!

      as soon as I saw she was just dumping that many fries in hot oil I was screaming No I was scared she was going to get seriously burned when it boiled over that could have been a life changing accident . You explained it very well.

    I worked for Harry Snider (the original owner of IN-N-Out) in the 70's and can give you just a few tips that might get you closer to the original. Harry literally had the burger bun made for him with his own specs so you likely wont match it but to come closer you need to toast the bun along side the meat on the grill without the extra oil. Only salt one side of the meat patty and make them thinner. Make the sauce using only ketchup mayonnaise and pickle relish, the original sauce was made with individual ingredients but using these three ingredients will come close. If you are going to pre cook the onions fry in beef tallow not vegetable oil, it would be better to cook the onions on the grill alongside the patty but the pan size will likely be your issue. When cooking the patty flip the burger then add the cheese and onion along with the top half of the bun and continue cooking till done. Take the bottom half of the bun add sauce, tomato, and Lettice, then place the cooked half over the bottom half and enjoy

    Usually when you cook French fries you blanch them first in the oil and then remove and fry them again so they get very crispy on the outside and soft and fluffy on the inside.

    The fries were wet and had a very large surface area. .They almost immediately took all the heat in the oil above 100 C. and turned the water in/on the fries to steam. .And, turn the pan away from you when putting things into oil.

    The mistakes you made were not ones that would ever disqualify you from being a good cook. Mistakes can make things interesting or at the very least teach us valuable lessons. Your adventures with frying french fries is something to learn from not feel self conscious concerning. You are still young and cooking takes equal parts talent and experience. You definitely have the talent and you are doing the right thing by trying new things in order to get experience.

    I love that you include the mistakes, I did the same thing when Ifirst friedmistake. It lets people know that mistakes happens and not give up. Another thing that you can try with fries or chicken if you’re using the liquid batter put fries into the dry batter and shake after wet batter. You made me so hungry for in and out.

    Atlanta- I just posted a note on your parents channel. They popped up in my algorithm and the title made me watch. As soon as they shared the new channel I went and subscribed to yours and your parents. The in and out video is my first and it is playing as I type. I love in and out as well!! Once in Anaheim California I ate a total of 10 burgers. 3 double doubles animal style the other 4 were one at a time singles, animal and protein style!! I thought I would explode!!     Once you have more recipes under your belt from recreating restaurant and other chain favorites, I’d buy a cookbook from you of recipes you know work and taste not just great but relatively like they should. It would be great to have a cookbook from someone who has cooked the recipes on RUclips where I can watch and see the results.

    Add salt to your soaking water to pull the moisture out of the potatoes. Let soak for at least an hour. Drain well, & let them air dry for a bit using paper towels, etc.. Then pre - fry them for about 2 minutes, drain, & let cool. Get's most of the moisture out. A little flippage with cornstarch, then do your magic with the " batter" because it will stick very well now. Fries to die for! A bit of garlic salt.. I could go on. Good for you, & will support your efforts!😊

    It's great watching you learn! I love cooking and I hate when people say that "they can't cook" because it's not that they "can't cook" it's just they havent learned how to cook yet. You clearly know a lot about cooking from your past videos on your own channel/ your parent's channel but we're always learning with cooking.
    A few things for the fries. First, In n Out doesnt batter their fries so that entire step wasn't necessary; it was perfectly fine to drop them in the oil after cutting. Secondly, if you are going to batter your fries leave room for expansion as you learned from the first batch, and lastly the reason your fries clumped together is because when they first hit the oil they need to be vigorously stirred to unstick them. If they go in the oil as a clump they will cook/ come out as a clump. So you need to de-clump them once in the oil, and you do that by stirring a lot to break them apart from eachother. If one fry is stuck to another in the oil they will stay connected. You gotta break them up!
    I worked as a fry cook at a chicken wing restaurant and we had a bucket full of raw chicken wings that we dumped into the frier. If we didnt shake the frier basket vigorously immediately after dumping the wings in we'd end up with clumped up wings like your fries because the wings stuck together in the bucket, went into the frier struck together, and came out stuck together. You need to break them up in the oil

    Here's a pointer on the fries, don't pour them directly into the oil from the bowl, drop a few fries at a time into the oil, you don't want the excess batter in the oil and to keep them from sticking together, fry a few at a time and keep them moving in the oil. I soak my fries in water before frying them but you have to make sure they are totally dry from the water before putting them in the oil. Also, another thing I do with homemade fries is I double fry them, fry them for a few minutes, drain them on paper towels, then fry them again until they are brown and ready.

      I'm the other way around. I've had In and Out Burger and it's good but not good enough for the ridiculous lines to get it. I have, however, been told Whataburger is to die for and I need to try it but here on the west coast I'd have to drive a thousand miles to Arizona to find one sadly.

    FYI the reason for the boil over is the water content in the fries. You need to get as much of the water out if the potatoes. Water and oils don’t mix. Ironically in the use around thanksgiving one of the leading causes of house fires are people deep frying turkeys that haven’t thawed out enough ie too much water in the deep fryer.

    Absolutely LOVE seeing the oopsie with the first batch of oil and fries. We learn from our mistakes as well as our successes. It's impressive that you, Atlanta, as young as you are, know to let us see your process and not just the "perfect" end product. You, young lady, will be as big a success as your parents/family have been for a few years. Yay you, girl! (Oh - and we've got In N Out up down in San Diego - where I grew up - and up here in the San Francisco Bay area too - where I've lived my adult life. It's def not just in LA!)

    Atlanta does a real good job in how she does the whole process.
    Even though she made a mistake, but it could have been a lot worse, no injuries or house fire, so good
    job in keeping it under control.
    I love how when done she does the taste test as if someone else prepared it, which is not easy to do and she does
    that so well.
    Keep up the good work, looking forward to your videos in the future.

    If you had a flame burner that first fry dump would have caused a fire. If you haven’t seen fire blankets for the kitchen, they are a great thing to have to smother fires quickly. Look them up.

    The fryer mishap was crazy, I am so glad the oil didn't catch on fire when it hit the burner. Is that an inductive cook top? Keep an extinguisher and fire blanket nearby just in case when you try new cooking methods. Also your oven door is pretty cool. Never seen one lift up like that. Great video. Stay safe.
