Jamaican Style Whole Oven Baked Red Snapper

    If you’re in the mood for a Whole Baked Fish for dinner, or a special family gathering, you and your family/guests are in for a delicious treat. With this herb stuffed Oven-Baked Red Snapper recipe you can do no wrong. Sprinkle on your seasonings - stuff with herbs and spice - put it in your oven - and you’ll have dinner ready in 40 minutes.
    2¼ lb Red Snapper
    2 handful of chopped spinach
    6 okras (optional)
    2 stalks scallions/green onions
    2 cloves of garlic (minced)Sc
    ¼ of an onion
    1 sprig of thyme
    2 tbl sp of unsalted butter
    1 teaspoon lemon pepper (salt free)
    1 teaspoon old bay seafood seasoning
    1 teaspoon johnny’s seasoning salt
    2 tbl sp sesame oil
    Directions:
    Scale, gut, and trim fins from fish as desired.
    Cut diagonal slashes on each side of the snapper.
    Season the cavity and outside of the snapper as desired.
    Stuff/Fill the cavity of the snapper with spinach, okra, scallion, garlic, onion, thyme and butter.
    Drizzle sesame oil onto foil and spread across the entire surface. Place the stuffed snapper unto the oiled foil and pile on the remaining herbs and vegetables. Wrap the snapper and bake at 350 degrees F for 35 - 45 minutes.
    Remove the snapper from the oven and allow it to rest for 5 minutes.
    Squeeze lemon juice on the surface of the fully loaded Whole Baked Snapper.
    Serve and Enjoy with any side dish!
