  • 5 lb bone-in beef rib roast
    3 tbl sp coarse table salt
    1 tsp seasoning salt ( I used cowboy seasoning & rub)
    2 tbl sp vegetable oil
    1 cup beef broth
    5 tbl sp red wine vinegar
    Thyme
    Rosemary
    1 head of garlic
    Sage
    Carrots
    1 white onion
    ¼ red onion
    Scallion
    ¼ Red bell pepper
    ¼ Green bell pepper
    Garlic Butter Herb Rub:
    1 stick of unsalted butter
    4 cloves of garlic (minced)
    2 tbl sp herbes de provence
    2 tbl sp rosemary leaves (finely chopped)
    1 tsp thyme leaves
    Let the roast sit and come to room temperature.
    Pre-heat oven to 500-degree F
    Rub roast with vegetable oil salt and seasoning salt.
    In a medium bowl mix together; the butter, minced garlic, herbes de provence, chopped rosemary, and thyme. Spread all over the top and sides of the roast.
    Place the rib roast on top of the vegetables.
    Place the roast in the oven at 500 degrees F for 25 minutes.
    After 25 minutes, turn off the oven and let sit for 2 hours.
    Do not open the oven for 2 hours.
    After 2 hours, remove the rib roast from the oven, carve and serve with your favorite sauce.
