    I have been searching for hours and still cannot figure how the texture, in the beginning, on the left is made? Do artists, also for 3d low poly models, just guess what it would look like and draw the texture?

      Look up head texture painting. I don't know how these particular GTA:SA textures were made but nowadays it's very normal to see people painting directly on the model.
