  • Beau Timken of True Sake is proud to be called a sake samurai. His fanaticism comes across in his enthusiasm for junmai, daiginjo, and ginjo, and he rails against those who encourage libation without education. Take the hint: learn from Beau.

    I love this man's passion. The way he speaks it's like he can't get the words out fast enough because he's so in to sake. He must be a wonderful conversation partner.

    I don't like sake that much, but man, these bottles are beautiful. Shows that something as simple as a bottle can be art too.

    I just bought two small bottles of sake from my local SAQ (it's a Quebec gouverment owned alcohol shop... Which is the only thing there is here): SHO-UNE Junmai Dai Ginjō. (Premium Sake), MASUMI SAKE okuden kanzukuri .

    I too don't understand his hatred towards distilled beverages. He's openly admitted there are crap sakes, as there are premium sakes. The same applies to distilled drinks. You can get just as much 'nuance' or detail in a vodka or soju as you can in a sake. I think he's just a purist, perhaps elitist.

    This guy is my hero. He's a typical american guy that appreciates a beverage that I hardly can find anyone who likes. Sake to me is an acquired taste, I like it, but I have to sip it extremely slow. and on top of that, I really can't stand very dry sake. It just taste kinda like vodka mixed with water to me. Then again I've never had what many would consider "premium" sake either!

    Sake is the comfort food of the alcohols. ;) It's like sitting in front of a warm fireplace on a freezing night, drinking cocoa while being hugged as you pull warm socks on your cold feet. But it's better than that.

    Irony is that both wine are probably more popular in Japan then it is sake, sad really. I've been trying to get into sake myself but from what I've learn you need a good example to get you started, and have been looking at even where to begin.

    The thing is, his preference in sake is objectively superior to probably 99.5%+ of his fellow country people, and 99%+ of the worlds population. He was literally honored with a special title from the brewers union which cements this fact. Beyond that, you people who think he came off as a prick must be very fragile people. He wasn't even really 'revealing his true power level'. Imagine how opinionated he might get about your average package stores selection of sake.

    Yo man, why are you talking crap about shouchu? It's the same about wine vs cognac:
    a wine goes bad after it has been opened long enough (post breathing and peaked);
    but a good cognac/whiskey/scotch/shouchu/chinese white rice wine, means that you can keep that same flavor for a very long time even after opening, sometimes up to 10 years!

    good overall, best info on sake i've been able to pay attention to. however their regard for shochu is unwarranted. why can't it be a sipping spirit? Taking his example of tequila, there are plenty of examples of quality sipping tequilas with pedigrees similar to sake producers, and don't be caught with your word as a liquor professional declaring all spirits to be mere mixers when the whiskey community come around to trying and buy sake.
