How I Can Butter - 5 Year Shelf Life!!!

  • Today I've canned 13 pints of butter. I've canned butter many times over the years and have Never been disappointed.
    As with all of my canned foods, I store them in a cool, dry place and primarily dark.
    If you try this method, remember to label your jars with the product and date. Also, remember to remove the bands once your jars cool for proper storage.

    I canned me some butter and after shaking those jars my arm game is strong lol. I even tried the garlic butter which I love so much. I'm making some more of that buttery goodness. I just gotta prepare my arms for that exercise. Lord. Thank you for sharing this method. I felt confident and scared at the same time but your video guided me through all that. That foam was off the chain on my toast. That's some pretty and delicious butter. Mine came out looking all cute I must say. Until next time.

      luv4jakey just canned 13 jars but there r Brown bits in white -also shaking isn’t mixing the two -cooked too long? Did acc to directions -is it all wasted???😪 well after a zillion tons of shaking looks ok now that cool -really had to shake not just swish back and forth -should the milk solids be tiny pieces u see floating around -just seems I had to shake way more than what I have seen -really hope it’s ok 👍

      Lisa LanceWork - butter has three traces of components left in the cream whether it is 50% or 65% cream: water, whey, milk(solids) that the reason of cooking over a low heat/softer boil the water evaporates, the milk foams to the top and the whey sinks to the bottom. The heat will change the whey and begin browning. Have you ever tried to sautés in butter and it begins to “burn”? It the whey factor! Just very carefully skim the foam and save - step 1... then carefully pour or dip the butter liquid out and being careful not to get the whey mixed in. Then the leftover substance in the bottom of if it’s a little brown it’s alright you can save and use to add flavor to different dishes when cooking ... needs to be refrigerated ... it’s the water, whey and milk in the butter that makes butter go rancid if left out for a long period without being eaten ... we don’t have that problem in our house . We go thru a stick or two every two of three days ... hopes this helps. Also there are excellent RUclips channels for making clarified butter and ghee.

      @@lisalancework7999 I shook my jars every 20 minutes. When it starts turning into more of a solid blob it does have solids bits because it trying to come together but separating at the same time.
      I just kept on shaking and it turned out fabulous. I used garlic powder for the garlic because I didn't have garlic on hand.

      If course you can trust the government in this. They have to compensate for people being dumb with their canning. That would be bad PR. Sorry I sound jaded. It's good to see so many folks into what I call a lost art. I learned this from my mom as a child in the 80's. It's served me well! Please all of you keep it up.

    Girl I am a long time canner, baker, seamstress, gardener...in my 60's. I cannot tell you the last time I so enjoyed a video on canning. You did it right.....you did it very good!

      truthgha That's called "siphoning" and it happens. As long as your jars seal properly, it's not a problem. Siphoning occurs if your pressure swings a bit, or if you don't get the correct headspace in your jars, or if you rush the cooling down process of the canner. After it comes off pressure, let it sit another few minutes, lift the lid, and wait another five minutes or so before lifting the jars out.

      @@truthgha it happens when canning. Pressure is released. That is why canner water should be clean and add little vinegar to canner before processing. It's normal

    The butter I buy is wrapped in parchment paper not foil. I drop the sticks in the pot still wrapped straight out of the box and let them melt. Then take the coated papers out and save them flat in the freezer in a ziplock to place in the bottom of cake pans. Use them like you would parchment paper, since that’s what they are. Just make sure the printed side is down; even though it’s food grade ink, I wouldn’t want the ink on my cake.

      Great idea! I save my butter parchment paper, too!
      I scrape off all the butter from the paper with an icing spatula, stack the flattened sheets together and put them in a ziploc bag, put the bag in the fridge, or just store them in my cold cellar.
      I shred newspapers and egg cartons that I "borrow" from my suburban neighbour's blue boxes on garbage day, when I walk around my crescent with my two dogs in the morning, and stow them in a big shopping bag. I also swipe any unread newspapers still in the plastic sleeve, and one neighbour discards her subscription magazines every month, and I take a pile of those home with me, too.
      If I'm watching Marie's videos on my desktop computer, I take my BIG shopping bag full of egg cartons and newspapers, and I tear the newspapers lengthwise into 6" - 8" wide strips, to fit into the paper shredder feed. I pull the egg cartons apart, hand-flatten the top half of the carton, then I pull the egg-holder cells apart so that I can tear and flatten the sides of the cells in order to easily feed them into my cross-cut or micro-cut office paper shredders. This process makes an EXCELLENT composter layering matrix for your vermiculture red wiggler worm box when you layer it between table scraps, coffee grounds and fall leaf matter. It holds the moisture so the worms can work their way through the compost matter, without drowning in water you might add to the box.
      Ever other time that I fill my paper shredder bucket, I take one of my used, flattened butter wrapper sheets, and I feed it through the paper shredder in order to lubricate the blades. It's MUCH cheaper than spending $17 dollars at Walmart for a 4oz squeeze bottle of shredder lubricating oil.
      I've been doing this for years, as an organic backyard suburban gardener, with NO harm done to my shredders. Every other year, I am able to empty out up to 80 cubic feet of loamy composted garden soil form my 3 PVC composters. You'd NEVER guess that I had filled them with layers and layers of shredded paper and egg cartons, all through the year, they are so perfectly incorporated into the loamy compost, so fluffy you can sift it through your fingers!
      Crisco lard and shortening parchment works very well, too, as shredded composting matrix!

      But the butter wraps have print on them. Doesn't that get messy or unhealthy or something when you bake (on) them? - using them to _butter_ your pans, I have heard that; but I wonder if it is safe to line a pan with them...

    I DID IT!!! I went through my freezer and believe it or not, I found 23 pounds of butter that we’re taking up a tremendous amount of space so I wanna head and canned them. So far I’m really happy and everything turned out great! Thank you for the video

    I'm 72 years old and canned and been around caning for many years. This is the first time I have ever seen anybody can butter. You sure thought me something new. You made me want to can my family some beautiful butter just like you! Thank you for teaching me something new!

      She is so cute and funny. I'm 76 and used to cold pack canning everything except meat. A neighbor used a pressure cooker and it blew and she had green beans in every nook and cranny and between her dishes. I was to afraid to use a pressure cooker after that. An 80 yr old neighbor, canned our meat including venison on a big wood stove in his garage. I stayed away from it. I love this canning butter, but still afraid to try it.

      @@jackieparent5027 Dear Jackie; Get yourself a pressure canner. The modern pressure canner has safety items build in and is impossible to go wrong. Follow the instructions very carefully. Once you have read all the info, start with a simple item to can. I started canning in pint jars raw chicken. When the canner is working it also cooks the items you put into the jars. Canned items lasts for many years. Always use the separating disc between layers.

      @@jackieparent5027 I'm new to canning but going to try it. Just the thought of having butter a year or so from now is very comforting. Oh, and I have always wanted to can but been afraid since hearing of a canner blowing up. These days the canners are made very well and have safety features.

      @@jackieparent5027 Same Here! Only I'm 65 & it was my mom's kitchen that needed cleaned! It didn't stop her from using it again (roast beef n veggies) but it made me fearful for life! I also remember her hand getting burned from a frayed cloth toaster cord! I made my little sister plug everything in for a while.

    My papa and an elder in our neighborhood Mrs green (around 80) used to teach me things like this when I was a kid. You show the same genuineness, humor, and wisdom I miss from those times.       There is no official and declared safe processing time for home canning butter, so I don't know what that process time would be.

      I'm currently canning 1/2 pints of regular butter and garlic butter. I was wondering about the time. I was going to can it for 60 minutes because I was concerned about the water level running a bit low, but maybe I'll try to up the time a bit and sssssee what happens.

      I agree that you should write a book👍🏼 Reason is that times are coming when we won’t have access to internet, RUclips etc but we’ll always have our book. Good old fashioned way of doing things in the absence of social media. This was my first viewing, I’ve never canned a thing in my life and I have to admit that I’m terrified of doing so. The big pressure canner pot scares me😳 I really enjoyed your demonstration and will continue following. I already subscribed and maybe I’ll get the nerve to can something. You’re good, girl👌

      @living the dream everything wont stay the same forever if in the worst case scenario happens, a war or emp,or censorship to the point we cant access it,its good to know ahead of time.
      And some fo off grid and dont use the internet whatsoever. The reason why there are so many views on homestead videos of any kind especially in the last few months is because people have figured out it's time to start growing their own food and living off the produce of the land so their not caught up depending on grocery stores or the government if I'd it decides to shut us down again.

    This lady is the real deal, cool calm articulate and funny to boot. Homesteader for 27 years and did many of the same things she and her man do but never canned butter. Will give it a go soon under these special circumstances of living in todays world.

    I am at the other end of this life. Even though I'm old, I still feel the pull to do this. But, Mom's Canner is given away, no more growing and canning green beans, tomatoes and fruit for canning or jams. The freezer is full of store bought food now. But I know how to stock a pantry, cook the fresh and preserved foods, and be prepared. I didn't need to stock up during this pandemic. Yes, knowing how clean your food is, is a comfort, and how it will taste, so pleasant to spend your days producing food, but that season of effort has passed for me. I love to watch you do it.

      Thank you so much for doing these videos and sharing you preserving, preparations for and cannings your.preserves. I really enjoyed your show.
      I grew up in a small family. My Mum grew up in London, England, my Dad grew up in Dublin, Ireland during WW2. Their food was rationed and she never learned to do any preserving and canning.
      Thus I never learned how to can and preserve either.
      I married and had 2 girls later in life.
      I had a very busy career. I lost my husband to cancer when we were still pretty young, then I worked a full-time, O/N job, a part-time job, and also a call-in position to keep us going. I didn't have any time for growing veggies and canning.
      Now I am in my early 60's. I had to retire due to my health. The future has never looked more bleak in terms of economic stability and I would like to learn how to preserve and can food. I would also like my daughters to learn how to preserve and can food as I have no idea what type of world they may face in the future. Thank you so much! 😁

      @@laurahammond4698 you are so right. My great grandma had a farm till I was about 9, but then she had a stroke and had to move into town. Hers was an old fashioned farm, no electricity or running water, and she still cooked on a wood stove. I clearly remember watching the stuff she did, but I wasn't old enough to help with much. I would help pluck chickens and stuff, but never anything that involved anything dangerous like a knife or fire. I wish I had been old enough to learn more before she had to sell the farm.

      Awe, MissPatti you should get yourself another canning pot and just keep doing what makes your heart happy! I wish I learned how to do all these things. I grew up in the city and we would buy our food from the grocer and prepare meals at home. Now days so many things are ready made to heat and serve it has made me a bit lazy but worse than that, are all the added ingredients that are not that great for you. Two years ago I decided I needed to start a food storage pantry but quickly discovered I have no idea what I’m doing. So many things lost their freshness very quickly even when they were stored in airtight containers, I live in the South so humidity is our enemy. What really surprised me was how quickly some items would taste rancid after six months especially crackers, nuts or cooking oils. I rarely use cooking oil but it’s necessary for some recipes, so I bought some solid Crisco thinking it had an indefinite shelf life but I found the flavor had turned before I had even opened it, with only three months on my shelf. I’m discovering there is so much I don’t know which makes me a little anxious. I’ve learned how to dry can and have bought a food sealer but it’s a bit of a risk not knowing if anything will be edible when it’s time to eat it. I’m most curious how to store eggs, butter and whole milk necessary for any scratch made dishes. It would be so helpful to know what people did during WWII or the pioneer days. I discovered Red Feather canned butter from Australia but it’s more than twenty dollars a can, then discovered how easy it is to make your own butter in the blender I might have to experiment with that next. Well, anyway please don’t feel old or give up! You have so much to offer and to teach, this new technology makes it easier for us to learn from those who came before us. 🥰Be of good cheer!

      Nettie Reynolds you can purchase a large pressure cooker from Amazon in the UK with information on how to can, it is not as large as hers but then everything in American is big, it still does the same job, you can also do this in an instant pot also, which is available again on Amazon.

      I just discovered this lively, lovely, lady recently as well. I will be trying both canned butter and ghee. Totally psyched about it. Once I learned that "companies" sell canned butter, well, common sense says if they can do it, I can certainly use my pressure canner and get safe results. I think taking the foam out is a good idea.       But how many days do you need to shake those jars before they completely solidify? I’m at day 5? Jars are not totally solid. There’s some yellow liquid that keeps surfacing after the jars sit. Please help.

    I am lovin your video. You remind me so much of myself.
    I just finished canning 14 pints of ghee. Yes, I said ghee. I have family that have allergies to milk proteins (milk solids contain all that protein). I do it the EASY way though.
    I have clear Pyrex bread dishes. Into each one, I put a total of 2 lbs of butter. After filling up 7 of my dishes with butter, I place them into a cold oven and close the door. I proceed to turn on my oven to 350 convection bake... it automatically lowers the temp by 25 degrees to 325 due to the convect option. I then set my timer for 3 to 3 1/2 hours depending on how soon the milk solids turn a golden brown.
    About 30 min before the ghee is ready I place my jars in the oven as well, to warm them and prepare my lids and other essentials. After I take my ghee out of the oven, I skim the top. Then I ladle the hot ghee into my hot jars the same as you, except that I also run it thru a fine strainer, which will capture any stray milk protein. After I finish, I pressure can it for 75 min @15 lbs. I generally do this once a year, but I also use the ghee for cooking as it has a higher smoke point and will not burn like butter does and it tastes great on toast or on potatoes too.

      Sometimes that popper will get stuck and stay up even when the lid is ready to open. Make sure the gauge reads zero. Then if popper stays up, gently nudge it. It should then go down if it is ready.

    I canned butter with garlic in October 2021. I just used to stir fry chicken and vegetables and it is delicious. I made some stir fry yesterday, today and I’ll make some more tomorrow. Thanks Homestead Heart for that recipe. This is top notch number one. 👍🏾

    I enjoy this.Growing up we milk cows and had a old International milk separator.My mother then made butter from the cream.The cream was close to to 100 percent cream.We sold cream and fed the hogs the skim milk to the hogs.We had a 55 barrel and fill it with barley and the skim milk and let it set awhile.I never did acquire a taste for buttermilk.You remind me of my mother.She was born in 1930 and live through the Great Depression.The folks learn all this growing.You are a good teacher here and enjoy the memories here.Tom M Eagle

      Sadly the older generation is leaving us and the one right behind mine didn't care to learn all of the old ways. I have my husband's great grandmother's recipes and canning books from the 20's. The simplicity of the recipes seem to make them better than any of the recipes now in the canning books.

    The ”foam” is called whey (like Little Miss Muffet) and it is the enzymes and probiotics in the butter. It is a waste product. To remove it is called ”clarifying” butter and makes for a more rich and quality product. Just notes from WI. Awesome video!!!

      Rebecca Stivers curds are actually a byproduct along with the whey. Here in WI we deep fry them or eat them raw. Some communities also use cheese whey from the factories to salt the roads to save money on our road salt rations.

      You can can milk, cheese, cream cheese, meats, vegetables, juices, fruits ECT . You cannot can rice or noodles at all!! You can make up your stews your soups whatever and can it, pressure can it. You'll have already made meals and then whatever you make if it requires noodles or rice you just cook that when you're ready for it. You can also dehydrate your vegetables and fruits and then put them in a jar and use food saver with the attachment for jars and suck the air out and then you have it sealed. Can also put oxygen absorbers and even moisture absorbers into the jars before you suck the air out. Dry goods like your rice, noodles, flour, sugar, beans, cereal, snacks etc. All of this can be put up for a really long time. Any of stuff like that, you can put oxygen absorbers and also even moisture sorbers into the jars and then suck the air out of them. With the air out and oxygen absorbers and or moisture asorbers it would make them last 25 years or more. You have to keep all the food about the same temperature though you can't let it get hot and then cold because the lids will go up and down on your can products and that's how you get botulism. WITH all foods no matter where they come you always pray over your foods. so it'll last longer and of course there is freeze dry if you can afford the machine or you can buy freeze dry food from places but between smoking your food in a smoker to preserve it can in it either pressure or water bath, ot using a dehydrator and the FoodSaver gives us a bunch of different ways to do something. Can water too😊 . 🙏📖🛐🕊️ Show ♥️ like Jesus then if need be 🔫🏹 then victory 🙌🙌

      I appreciate this info bc I heard another lady on youtube say because of it's high fat content it can go rancid, so use it within 6 months. I got nervous.

    I'm 68 years old I bought a pressure canner in November and never used it because I was scared to death until I looked for a simple recipe and I found you on how to can butter. I used 2 lb of unsalted and 2 lb of salted butter from Sam's Club I followed your directions to the letter with the video playing as I worked and it came out perfectly! it yielded 6 pints ...I wish I could send you a picture

      I misplaced or lent my big pot to water can. I'm so mad! I had a bowl of tomatoes peeled and cut, and no pot, no canner!

      @@judyconstance9982 I'd think it's either can the butter or you'd need to buy powdered butter. For longer term storage. Unless you have freezer space to freeze a bunch. Options.

      @@judyconstance9982 so it will last you five years, you can freeze butter but it will maybe last you a year without getting freezer burnt. If you get it on sale and want long term supply is a good thing to do.

      You can can anything you can fit in a jar, but there might not be safety guidelines for it.

      Look up ghee. It's canned, clarified butter.

      When God said my people perish due to lack of knowledge, it's the knowledge of the spiritual, mental and the physical he referring to...all aspects of living a Godly life.

    Thank you! I’m an avid butter hoarder. I had no idea you could can butter until I stumbled across your video. I’ve been canning for decades but only by the books. I didn’t have anyone to teach me. I’m now subscribed and will surely watch your excellent teachings.

    You are a delight! My Granny taught to me can many years ago and I still use her canner.. I have hers and 2 of my own! 🤣 I have watched just about all the different canning channels but you are my favorite!     You and Mr. Homestead Heart are souls after my own heart. I learned to can butter from an 80 yr. old Prepper and his dear wife. Been canning it for six years. Have made just the hot butter canned, pressure canned and ghee. Like all of them. Ghee is good for cooking at high temps. I have opened just hot butter canned that were over five years old and they were in very good condition. I am told the ghee can last up to 20 years.
    God bless you and reward you for all you do for those trying to learn life skills. They are just as, if not more important than book learning.

      My mother always did that..as far back as the 50’s. I think it was a holdover from the lean times of WWII.

      My tip - store the wrappers in the freezer to stop them going rancid before you need them 🙂

    I'm 69 and canned mostly fruits for my family as they were growing up. I haven't for the last 20 years but you've encouraged me to get back into it and can things when they are on sale and to be prepared. God Bless you and keep You and Yours!

    I loved watching this video. It made me recall days with my grandmother churning butter. She canned veges but no butter. Thank you for speaking to newbies about the canner. People talk about canning on vids, but don't say how or when to do what or why it matters. You are informative and cheerful. May you be cheerfully blessed.
