I’ve been making this recipe for at least the past 5 years maybe more for the holidays. It’s loved by family and friends. I keep coming back to the video for a refresher in the technique. The meringue mushrooms always get oohs and ahhs. So cute on the cake and yummy. Thank you Stephanie!

Great recipe, and superbly explained. Thanks you!! Lovely to see a 'Kenwood' Mixer being used. I'm still using my Mother's Kenwood 'Chef' which the family bought in 1958, and 62 years later it's sill going strong. Indeed I used it today, New Year's Day 2021!!

I want to make this again this year :) I remembered I made this a few years ago and I just put a white sugar frosting on top though ( as if it had snowed lol), the people at dinner were a bit skeptical, then they tasted it and for a few seconds silence, then "wow! this is amazing!" I love all your recipes Stephanie, I've been a fan for years and I always get compliments when I make your recipes!

Thank you! Your instructions were the best (I watched several, lol). I made one for two different parties, and they were both a big hit. One thing we found out the hard way is that the mushrooms go a little soggy if you decorate the cake with them before putting it in the fridge. It's much better to decorate the cake right before the party. They were still yummy, but they didn't melt in the mouth like fresh ones do.

What a great recipe! I made it today and it was a hit!!!! I made it with mousseline cream (pastry cream with creamed butter) because I didn't have enough heavy cream. The chocolate sponge cake is moist, it didn't break when I rolled it and the flavor is fabulous. Thanks Stephanie!

Hi Stephanie, thank you for the recipe and your clear instruction. This year I’m in charge of making a Christmas cake, I was gonna just make a typical round cake but then I found your channel. I’m so glad I did. I’ve just finished this yule log this afternoon, it’s in the fridge waiting to serve my guests on Christmas Eve. It looks sooo good and i had a little tests here and there, very yummy. Hi Stephanie, this looks great. If making ahead of time, would you recommend frosting and refrigerating covered with a plastic wrap on the platter? I was thinking of just rolling and wrapping that in plastic, and then frosting last minute, but obviously the first option would save more time on the day.

hallo let me first say that you look gorgeous, this blue is so your colour!!! Since i never butter under and gust put on parchmant and it not only does not stick and not crincle but it also gives you a cleaner pan witch i have
to wash by hand so its a big help. My question : why do we have to first butter and then parchment?

You can either spray the pan or butter it. I do this first so the parchment paper will stick to the pan. Otherwise I find the paper slides when I'm trying to spread the batter.
