Professional Baker Teaches You How To Make LADYFINGERS!

  • Chef Anna Olson prepares these chocolate-dipped lady fingers, the perfect dessert for a dinner party.
    Baking directions for: Chocolate-Dipped Lady Fingers
    Recipe ingredients:
    ½ cup all-purpose flour
    5 Tbsp cornstarch
    3 eggs, separated and at room temperature
    9 Tbsp sugar
    5 oz bittersweet chocolate, chopped (for dipping)
    ¼ tsp cream of tartar
    Recipe directions:
    1. Preheat the oven to 400 F and line 2 baking trays with parchment paper.
    2. Sift the flour and cornstarch together and set aside. Whip the egg yolks with 3 Tbsp of the sugar until thick and pale and they hold a ribbon when the beaters are lifted. In a separate bowl, whip the egg whites with the cream of tartar until foamy, then slowly add the remaining 6 Tbsp of sugar and continue whipping until the whites hold a medium peak when the beaters are lifted.
    3. Fold the whites into the yolk mixtures using a whisk, then fold in the flour until just incorporated. Fill a piping bag fitted with a large plain tip and pipe lady fingers onto the prepared trays that are 4-inches long and an inch apart (they will spread a little once piped). Bake for about 8 minutes, until the fingers are an even golden brown. Allow the fingers to cool completely before removing them from the trays.
    4. For dipping, melt the chocolate in a metal bowl place over a pot of barely simmering water and stirring until smooth. Dip each ladyfinger a third into the chocolate and place on a clean parchment-lined baking trays to set (chill for a little, if needed).
    5. The dipped ladyfingers should be enjoyed the day they are dipped, but undipped ladyfingers can be stored in an airtight container for up to 5 days.

    I have watched this video many many times and I LOVE it! The first time I made the cookies they were so easy to put together! Anna does an outstanding job teaching us how to bake.

    Thank you so much. I’m making a dessert that requires lady fingers, but I couldn’t find any pre made. None of the recipes I found mentioned cornstarch. This seems like the best tutorial.

    You use a deck oven in your baking, and I thought that was only good for pizzas and breads but not pastry, especially delicate pastry. What kind of oven is best for making cakes, flans, and other delicate pastries like lady fingers?

    Hi there
    I am following you for couple years now and I am enjoying the videos you are making. They are so easy effortless to follow and I am a big fan.
    However, I did watch this over and over to see when the Cream of Tartar was added and I couldn't see when did you added to the batter! Could it be added with dried ingredients or with the eggs during whipping? Thank you.
    PS: Is there a version in Grams for this recipe :)

      Maher Al Jannan you always have to add cream of tartar to the egg whites before whipping them. :)

      Maher Al Jannan you’re welcome! Cream of tartar is used to whip the egg whites fully and keep them stable, if you can’t find cream of tartar in Sweden then you can use the same quantity of plain white vinegar, that’ll do the trick as well. :)

      blue flower from what I know, its the same. Vinegar is as concentrated as cream of tartar

      By mixer do you a mean stand mixer? I have one but my whip broke the other day. I do have a hand mixer that does have a single whip attachment. Can I ask what went wrong? I just saw this video and the one she has for the raspberry lemon mousse torte where she uses her ladyfinger recipe. I have everything to make both but if using a hand mixer is what you used and failed I don't want to risk losing all of those ingredients. Thanks!
