I saw sooooo many things that you do that others do not do that I did not know about! AWESOME JOB ALMA! All these tips put together make the big difference in how the menudo comes out. The tip about blending some corn! Excellent. I also did not know about the way in which you do the kosher salt and the way in which you do the lime juice! Excellente! I also like the tip about no skin on the beef. I will also be using more chili California and less Guajllio chilies.
