I did actually fall through once , scared the hoddy to death when I dropped into the garage right next to him . 😱. I remember you mentioning this yourself on your last video. However, now it’s opened up and is more visible, my OCD is on overload 🤣.
Hay buddy. The dressing room change will depend on how tidy you can keep the area, if everything is tidied away and in cupboards draws then open it up. If you know draws will be.open and clothes everywhere then keep the wall in and you can close off the area.

You'll be on the home straight now that you have that floor down and can start imagining all the rooms properly!
Split my master bedroom up last year by putting a walk in wardrobe in. Never looked back. Having the wardrobes, draws, shelves tucked away made a huge difference. You have everything in there not because it looks great but because it's functional. Overall, I guess my walk in wardrobe is a little cramped, but it doesn't matter as we just close the door and forget about it. The master bedroom honestly feels bigger with it in.

Make the bathroom bigger mate, a tiny en-suite can feel claustrophobic. You can always add more cupboards in the room, if needed but the bathroom is permanent
You could take the wall out for now and possibly put a glass panel or those glass bricks (frosted or plain) in just to divide it but so you can still get the light.
Dude I’m the same as you with heights. It took my to take a tumble from a first lift scaff to analysis risk differently. Years ago I would have flown across them open joist though 😂
Have you thought about putting networking in as well as electrics. I had my house rewired and put network in for smart Tv's and Wi-Fi, now it's a Smart House!
Glass door mate for the wardrobe, it'll sort the light issue out from the velux, and if you don't want anyone seeing your bits and pieces you can always use frosted glass... 😂 👍
I was going to suggest to remove the wardrobe wall and replace it with a built in dresser that allows for storage of smaller clothing items and provides a work top for laying out clothes.
you could always have have a dump in the shower tray if there's no space for a throne. keep the wall and lock the bathroom door ! its the only place you'll get some peace
What about a door to the bog. When you've dropped a.massive turd and it stinks, the Mrs won't be too pleased as the bisto aroma spreads through the house
